    Fermentation not starting.

Thanks all! I repitched, being more patient to let it acclimate. Also got the must up to 64. This morning it finally got going, whew.

    Fermentation not starting.

Thanks. My ph is low, 3.1, so perhaps a factor. Just gave it another shot taking more care to slow incorporate must. The racking was just following an initial overnight cold soak to let things fall out.

    Fermentation not starting.

I have about 22 gallons of sauv blanc that I processed on Wednesday of last week, adding 50ppm SO2 at the crusher. Cold settled overnight at 50F, then racked on Thursday night. Prepared Cellar Science yeast with Go Ferm and pitched Thursday night. Still nothing! Seemingly no activity 3.5 days...

    Whole cluster volume

I am going to be picking up a few 500lb batches of grapes this Fall. I'm trying to get a sense for the weight to volume ratio so that I can figure out how many plastic totes I'm going to need for hauling. A "half ton" macrobin has a volume of around 180 gallons. So while that would translate to...

Putting together a Sonoma zinfandel buying group

Thanks! That's actually where I found the grower I'm talking to. Have reached out to others but the vibe I'm getting (from all the non-responses) is that most want a big take. Will definitely check out the Mendocino listings as well.

Putting together a Sonoma zinfandel buying group

All good questions! So far I'm just trying to convince growers I'll make it very easy on them, so haven't asked too many question. Reality is that they are looking for long term commercial buyers and my assumption would be the best lots are going elsewhere. Can't blame them for that! I only...

Forming a group to buy southern Oregon tempranillo

Thanks for the shoutout! I may actually have a lead for you on Oregon tempranillo, will check in and let you know.

Putting together a Sonoma zinfandel buying group

I have identified a promising lead on zinfandel grapes from Dry Creek Valley in Sonoma. Professionally farmed and usually sold to an established winery. The owner has been nice and responsive, but seeing as how I'm only looking for 400lbs, I'm probably more of an annoyance than a real business...

    Sourcing Lodi grapes

I've found local message boards for Sonoma and Napa where growers can post available fruit. Have searched around and haven't found anything for Lodi yet -- which is odd when Lodi dumped massive amounts of fruit last year! Anyone know of any boards or forums to connect with Lodi growers? I would...

    2024, What are your plans?

Going to depend on what grapes I can track down! The hope is to do around 15 gallon batches of both Cab Sav and Pinot, and maybe a smaller batch of white. Would love to get some early picked Chard and do a batch of sparkling. Over the summer will start checking the few message boards I've found...

Minimum fill of 80L bladder press

Thank you both! They guys wants $250 for it and his hobby never really got off the ground so basically new. Might just snag it and flip the thing, but doesn’t seem to be what I need.

Minimum fill of 80L bladder press

I found a wild deal on a used 80L bladder press. Does anyone have a sense of what the minimum batch size would be for the press to operate effectively? I plan to do some batches from about 100 lbs of red grapes. Too big of a press for that right? I could do bigger batches but had wanted to keep...
