    Never pour it out unless it is really spoiled. Some no-so-good wines actually make good sangria. Or cooking wine.

    That's good news for you. Add enough syrup to get it to around 30% ABV and you will just have that much more limoncello.

    Unless I miscalculated, the 4 cups sugar and 8 cups water would give just over 10 cups of syrup. Using that amount of syrup (2.4 liters) to 1.75 liters of Everclear would give you a finished ABV of about 40% if you are using 190 proof Everclear.

    I stirred the bucket as I was racking, to keep the sediment in suspension. I got just about all of it. I will wait a couple more days before racking to degas and put in the potassium metabisulphite, kieselsol, chitosan, and potassium sorbate. Right now, there is maybe a bubble every 30-45...

    I had stirred in the yeast nutrient, as per instructions, when the SG got down below 1.05. Then when it got to 1.02 I racked into the carboy, again, per instructions. At that point, it was at 1.014. The next 5 days saw it go to 1.006, 1.002, 1.000, 1.000, and 1.000.

    This is my second Nero D'Avola AllJuice kit. The first kit fermented down to .992, but this one has been at 1.000 for the last 3 days. Same hydrometer, which reads 1.000 in water. And my first kit was just back in October, so not a lot of time difference. I am assuming (maybe incorrectly)...

    30% never kept me from a second glass. ;) But the glasses are small all the time. But I get what you are saying. Edit: Out of curiosity, I checked out the limoncellos at Total Wine and More. Just about all of them were between 25% and 30% ABV.

    How many lemons? If you lived in Sorrento, I guess you would just need to calculate surface area of you lemons to figure out if you would need more than one.

    I bring bottles of the 190 proof Everclear to my brother and brother-in-law in southern California because they can't get it there. It is available here in Arizona. Yes, you have to dilute it more to get it to a sippable ABV level. But the extraction is so much better and so much faster, too...
