LOL on your rant. The only reason I asked is that my brother-in-law said he had a wine foam out of the barboy during degassing and I guess that would be more likely to happen with the wine in a carboy than in an open bucket. Seems it would also be easier to pour the additives in with the wine...

I want to try another Nero D'Avola kit. Does anyone other than Mosti make a Nero D'Avola kit? I have looked around some but haven't found any others.

My daughter gave me that for Christmas a year ago. I love it, too. Just make sure to pour the wine through it very slowly.

Just bought the Eclipse kit. Going to leave the Super Tuscan in the carboy for another month, then start the Nebbiolo. Fortunately, our Winter has been fairly mild and my garage temperature has been fluctuating between 57 and 67. I figure that range should be pretty good to ferment another batch.

Is the Amarone Classico a really good one? Is it drinkable early? Early, as in drinking within a month or two of bottling. Not early in the day, although that would work too, on some days.

Just racked the Super Tuscan to another carboy after a month of clearing. It already looks quite clear, but I will wait at least another month before bottling. I am sneaking a tast as I post this. It is pretty good already, although not nearly as good as the Nero D'Avola at the same point...

What would you consider "quick drinking kits"?

Storage will be my biggest problem because we don't have basements here in southern Arizona. So my only option would be to build a rack in the closet in my computer room or get a wine cooler that will store a minimum of 60 bottles and put that in my garage.

I am originally from Rhode Island. I guess I will have to make double batches of all my wines just to be able to save a couple of cases for 3 years or more.

You could also see how that wine works making a sangria with it.
