    After re reading your question, yeah that’s not how a Niagara Wine should taste. Sounds like the juice was bad or old or maybe got a infection somehow. Definitely shouldn’t have a woody/musty smell. I guess go ahead and backsweeten some and wait it out a month or 2 and see what happenes

    What Sal said. 👍 I’ve made a couple Niagara wines and to me it’s a pretty neutral wine that doesn’t really have a lot flavor, if that makes sense. I always fermented dry and then back sweetened to taste.

    I pretty much do the same thing as you. After I use my 5 gallon barrels 3 times, I then start adding cubes soaked in bourbon to the barrel to try to rejuvenate that bourbon and wood taste that diminishes thru uses
