    harvest too late?

It depends on the varietal and the weather. Riesling can be pretty good at 19 Brix....a red might not be. You ask what will happen if you wait until the grapes are past-optimum? Well, you might not have ANY to make wine with, let alone any to make decent wine with. In my experience, grapes...

Crushing and cleaning grapes yourself vs. Crushing-destemming at grape purchase

In the past I have had my grapes crushed/destemmed and later pressed at my suppliers site, which was great that they did offer that service, but it was always a concern to transport gallons of must/liquid back home. It is much easier to transport lugs of grapes than buckets/brutes of juice, so...

The number 1 rule I have learned from starting a vineyard!!!

Probably my biggest lesson learned in planting vinifera was that I HAVE TO spray sulphur in order to not have powdery mildew ruin my crop. I assumed the vinifera grapes would be as effortless to grow as my food-grapes ( concords and a few seedless varieities ) but I was wrong. Powdery mildew...

    Last spray

I sprayed my last sulphur-spray of the season a few days ago. ( southwest Washington state ) Mildew is a very real problem here with the warm days, cool nights and dew in the mornings. I spray everything in my vineyard...grapevines/grapes , posts, and surrounding groundcover. Seems to...

    Liqueurs, infusions, extracts section?

Here is a basic recipe I use for an Everclear ( 190 proof stuff ) and simple syrup ( water/sugar mix ) 750 ml Everclear infusion 750 ml simple syrup ( 375 ml water plus 375 ml sugar ) So, basically a 1:1 ratio of hootch and simple syrup. Use a quart of Everclear? Add a quart of simple syrup...

Dundee Hills Pinot: 3 hour decant!

In my experience, almost any decent, full-bodied dry red wine benefits from decanting for an hour or two. And if you forgot to decant ahead of time, you can always pour a glass or two into a cocktail shaker and give it 30 seconds of shaking....it actually helps!

Looking for recipe on how to make 'bing cherry' wine

Here is a link to a decent recipe to make 'cherry cello' , which I just tried this year using Van cherries ( dark sweet cherries similar to Bing ). It is basically just soaking cherries in Everclear for a couple of weeks and then adding simple syrup to dilute the alcohol content down ( I do...

    Sangiovese oaking ?

I've been using these little oak sticks in my 5 gallon carboys of Sangiovese and they seem to work pretty well. I have been using the medium toast French oak ones, (one stick in a 5 gallon carboy), but I am contemplating changing that up and trying the American oak this year. I've usually...

Pest Prophet for grape powdery mildew

I'll be taking a look at this and probably try it out and see how it goes. My spraying sulphur is pretty basic, with the only real difficulty being finding the right time between heat waves or rains, but maybe this pest prophet will be worth the look. Thanks for sharing!

Dry-semi dry wine from Van sweet cherries

Misko....my slightly unripe Van cherries are sitting at about 14 Brix , and they are a little tart. If I were making wine out of them I probably would approach it using a rhubarb wine recipe, which would be adding a bit of sugar to it, for sure.

Dry-semi dry wine from Van sweet cherries

I have a decent crop of Van cherries this year that I have been thinking about using to make a 'cherry-cello' ( same as limoncello but with cherries, of course) , but I hadn't thought about trying to make wine with them. Maybe I should! I'll get the refractometer out and see just where the...

    Bird netting recommendation

Here is an interesting method to repell birds from your vineyard! https://www.birdcontrolgroup.com/ I saw this a few years ago while I was surfing the net looking for solutions to keep birds out of my grapes. I did not buy this , but if I had a few acres or more of grapevines, I would...
