    when good wines gone bad

Joe writes "I also wanted to let you guys know that it's been chilly here in New Jersey." Joe - It's chilly in northern AL also. The wife keeps the thermostat on 63. I don't have a bellie belt so I use a bulb on a lamp I made that I set next to my carboys that are in a closet. Keeps them...

    Laws in your country

FRJEN - As everyone has said it depends on your State. Alabama Gov. Robert Bentley signed legislation into law Thursday May 9, 2013 to allow people to make beer and wine at home. The state was the last state to legalize the hobby. The Alabama law allows home brewers to make 15 gallons of beer...

Great, thanks. I'm going to try it on my non-oak Chardonnay and I'll let you guys know what happens.

    RJ Spagnols Sur lie

Shoebiedoo - Thanks. I'm going to give this a try. This is also the first Chardonnay I've made. My wife never cared for it, but I believe she's going to like this.

Also, I have a Pinot Noir that is 7 days in the secondary. Would it benefit from the Battonage process?

    RJ Spagnols Sur lie

This is a very interseting thread. I have just started the WE Eclipse Dry Creek Chardonnay and it is still in the primary. I have never heard of Battonage until now. I believe I'm going to try it with the WE kit. I found a posting by "Wade E" from Apr 2009 that talked about this. Below is...

Cellar Craft Bottled: Showcase WA Merlot

Shep - I made a CC Red Mt Cab 2 years ago & had the same thing. Looked just like your picture. I opened a bottle after about 6 months and the crystals were in the bottom. It didn't affect the taste, but it looked bad. I should have poured it through a filter or decanted, but didn't. I...

Other Brew Belt or Let'er Rip?

I have a different approach. I keep my house at 63 during the winter months. I use a lamp. I place a lamp with no shade and a 100W bulb next to the primary & my glass carboys. I found this keeps the temp at around 76. You can adjust the heat by moving the lamp further or closer. It's not...

    dont be scared..show your age

Only 62. I grew up a military brat. Lived in Germany in the late 50’s. Had to boil our drinking water. I remember a lot of war damage to the cities.. Lived in Pittsburgh in the early 60’s and saw my first baseball game .. the Pirates with Roberto Clemente against the Milwaukee Braves. In...

Heat gun versus boiling water to seal shrink caps

I put the labels on some empty bottles I had. The picture is a little fuzzy but it's probably the camera man. Can't do this without a couple of beers. :h

Heat gun versus boiling water to seal shrink caps

Ibglowin - Nice site for labels. I logged on and got some great ideas and managed to download JPEG's and redesign some nice labels via PowerPoint. Thanks for the tip. I like to make my own label and I use a glue stick to put them on with. The glue is not very powerful and easily come...

WineXpert WE Chocolate Raspberry port- stuck fermentation.

I made a WE Chocolate Orange Port last year and couldn’t get the SG down to what the chart had on the instructions before stabilizing. When I started I followed the directions & racked into the secondary when SG was 1.016. After 3 weeks in secondary I thought the SG was stuck because the SG...

Heat gun versus boiling water to seal shrink caps

Ibglowin - Nice looking labels. Do you make them yourself or order them? I use the boiling water method. It always works good for me & takes about 4 seconds per bottle. I might have to go to Harbor Frieght & get a heat gun just to try. I always like new toys.

    WineXpert Wine Expert Question

I would do what the kit says up to bottling. Some kits want you to rack and then add sulfites and clear. Others want you to stir up the wine, add the sulfites and then add the clearing agent. I would follow the directions but before bottling is when you want to start your bulk aging process...

    Degassing after bottling?

Krahm - I too believe you should leave them alone and decant when you open them. It shouldn't affect the taste and I'm sure no one will notice unless you tell them. Last year I had a Pinot Gris that was a little bubbly when I opened it. It still tasted fine and the CO2 dispersed rapidly. I...

    Other The Best Merlot

Dawg - I never met a Merlot I didn't like. In January 2013 I started the Eclipse Napa Valley Stag's Leap District Merlot. I let it bulk age for about 6 months then bottled. Last month opened a bottle and it is the best Merlot I've made. My wife loves it so I don't know how long it will...
