    Haha true, or perhaps I’m just challenged. I ordered some larger bungs, these are designed for 1gallon jugs apparently. They work great for the 1” holes I drilled in the primary fermenters, of which I have four.

    That's a good idea actually I'll give that a shot. I find spraying with some.starsan helps aswell to break the rubber to glass seal...the toggle bolt will help. I've lost some in carboys before, I just use a plastic bag then I rack and they come right out.

    In carboys, maybe it's a #6 than. Perhaps they are too small, they fit tight right into the neck. On the brightside they are very secure, and a small child would never remove it.

    Oh yes, the carmenere is fantastic. I have one bottle left that's 2.5 years old, I started a new batch that is about 8 months old.

    Has anyone seen a tool that removes the solid rubber carboy bungs with the drilled holes? They seem impossible to remove, needle nose pliers tend to chew up the bung a bit. I’m using #9 bungs.

    Silicone Vented Bungs

    Just posted a new thread, I did an informal experiment and found that the silicone vented bungs perform better than the hollow rubber, lipped bung and airlock. It seems that water would be more permeable than silicone which makes sense since it’s less dense.

    Yes I also bulk age without clearing agents for 10-12 months on the big reds. So you're saying I should skip degassing at all and just rack every 3 months or so? I just like to get rid of the gas so the bulk of the sediment drops out quicker.

    I've heard of flex tanks, can you get them in 23L? I like the idea of having more control with the oak flavor and being able to see the level through a flex tank to know when to top up.

    Right but racking from the bottom up...is it really that bad? Other than that we are not getting any other form of oxygen into a sealed up carboy. It would be cool if we had some sort of micro oxy units to mimic a barrel.

    How many pumps does it take? Also I thought a little bit of oxygen, such as through rackings helps with aging, why go through the trouble of vacuum racking? Commercial wineries age in oak which also expose the wine to oxygen, this makes the wine subjectively better.
