    Limoncello, take 2

Thanks Mike. I make the labels in Publisher and copy them to a template in Word. I’ve pretty much standardized on Avery 94215 photo glossy labels for convenience. And I spend WAY too much time on 1001fonts.com...

    Limoncello, take 2

Our limoncello went into bottles today. 151 EC, 5 pounds of lemons zested and peeled (some of each - my daughter zested, I peeled, ended up something like 16 lemons in five pounds), started with 1325 mL of alcohol. Sat on the zest for 49 days. Cut to 60 proof, netted just over eight 375 mL...

    DangerDave's Dragon Blood Wine

I have good luck with one of these, no overflows yet (ignore the shoes...)

    Old school Dandelion Wine

Hey Dizz - Chaptalization is the word for adding sugar to increase the finished alcohol content in wine. I have no idea on the boiling, though. Have never made, or drunk, dandelion wine... Scott

Source for 30X60BVS/BVP 30mm screw-top bottles for use with Novatwist?

Hi all - I've searched and can't find an answer: I want to bottle some upcoming wines with Novatwist caps, and they require 30mm screw-top (30X60BVS/BVP) finish bottles. My usual sources are all 28mm. Anyone have any sources for the oddball size? Thanks! Scott

This is what I came up with for my blueberry port I bottled a few months ago...

FF: Two three-packs of Buon Vino Super Jet #3 Fine filters

Hi all - I ended up buying Super Jet filters when I meant to order Mini Jet filters, so I have two 3-packs of #3/Fine filters. Free for postage. I have no use for them, figured someone here might. They'll go in either a smallish box or a padded envelope. Thanks, Scott

    Fortifying blueberry to a port?

Proof-wise it's the same as what we get for Everclear locally. However, I am NOT the one to ask - vodka is not my thing. Maybe someone else here can advise on the flavor profile with a really strong vodka?

    Fortifying blueberry to a port?

Hi Izzy - Thanks! I usually do all the label and bottle design myself, but my daughter generally advises (or at least approves) on the capsules. I like the cobalt bottles, but haven't found the right wine to put in them. The blueberry port would be a good one! Scott

    Fortifying blueberry to a port?

Dawg, I may be interpreting it wrong, but I thought the rules against discussion of shine is aimed at production. What Dizzy is talking about is a brand, commercially produced product. Not sure those rules apply. Dizzy, I used Everclear to fortify. I detected no harshness in the final wine...

    Fortifying blueberry to a port?

Bottling day! Blueberry Port 2019 by Scott, on Flickr Ended up, after conservative racking off sediment and filtering, at twenty six and a partial 375 mL bottles. Sat on oak for about 2.5 months, has a really nice flavor. Needs to integrate for a while, but glad I used Everclear - brandy...

    Name that Haze!

Bottling day! Racked off the sediment, filtered, and into bottles: Untitled by Scott, on Flickr Sauv Blanc, finished by Scott, on Flickr Tastes fantastic, and sparkles. Hopefully the haze is gone for good...

    Name that Haze!

I think it's clear now... Very pleased with how this turned out. Going to let it sit a while more, rack, filter, and bottle. Groovy.

    Name that Haze!

That seems to have been golden. There’s still some really fine particulate suspended, but it’s also only been 24 hours. Amazing the difference that made. I can see though what a PITA racking is going to be, looks like ash. I’m good with this. While I’d like to take a more reactive approach...

    Name that Haze!

Thanks Fred - that's essentially what I did the first time 'round, want something a little more proactive this time. I'd be super frustrated if it threw another sediment in bottle. Still hazy this afternoon, so bit the bullet and fined with bentonite: That's at 0.33 g/L. We shall see...

    Name that Haze!

Hi all - So I've got this '18 sauv blanc from Washington State juice. Nothing remarkable about the winemaking, but was a little hazy before bottling. I ran it through a #2 filter on the Mini Jet and it looked brilliant. Bottled, laid up. A few months after bottling it got hazy and...

    Fortifying blueberry to a port?

Okay, I'm so beyond happy with how this worked out. I fortified with 151 Everclear (which I'm amazed they sell in PA). Wanted to minimize dilution, and am not a fan of brandy. Made an f-pack with 4 pounds of the frozen wild blueberries, ended up with a little over a quart of juice reduced...
