ernst T - how much wine are you making? I have had the red for 12 years. I make wine every summer and fall (and now winter) with multiple fruits. No rust, no problems, very simple easy device.

What varieties are you planning to grow? As I'm sure you know growing vinifera grapes in the SE is next to impossible.

Sherry? Specifically Amontillado. Not sure if it would pair great or not, but it has a very nutty flavor that might work great or clash. You've got me fired up to order some and try it out. My wife loves Reeses!!

You want to make sure the transfer vessel is sanitized.

Could they be cleaned and perhaps sanded and charred on the inside for re-use?
