    It's hard to say. If you were back sweetening, you'd want to wait and add both. Buy if you're not, just add the kmeta and bottle. That's what I'd do anyway.

    Cool recipe! I'm thinking that I'll do a SP and in secondary, I'll throw in some dried blueberries and a blueberry extract, and let it sit for a couple weeks.

    You could also choose to add sugar in a different way. Raisins are basically little sugar bombs and you could cut the sugar with more raisins.

    Hey! I'm in Houston too. There are a couple of vineyards around (Baytown and Santa Fe, are close to me in particular). Most of them will sell you grapes and may even let you in on their process. The vineyard in Baytown is particularly welcoming to new hobby winemakers.

    I was thinking about doing a blueberry lemon by doing a straight Skeeter pee and then adding the concentrated blueberry syrup that my brew shop sells. I think I'll add it in after stabilizing but it could be nice in secondary fermentation.

    Would I have any issues if I didn't degas properly before bottling? Most of the gas was gone but would the rest disappate over time?
