    You should be able to add the grapefruit even after stabilization. Try it out. You won't lose anything from it. I did that for my rose after stabilizing (like 2 months afterward) and it worked pretty well.

    Yeah, it's a cheap kit. One of the $50 weekday wine kits. Do you have any recommendations for turning one of those kits into a nice port style desert wine? I tweaked it a little with currants in the beginning and made it to 5 gallons instead of 6.

    I think I'll try something like that. I've got a cabernet going right now. Would that be a good candidate? I'm considering step feeding to bump it up. And adding instant coffee and cocoa powder for that coffee/chocolate flavor.

    Yeah, if I were going to bottle, I definitely would've added sorbate. It's just crazy to believe though. I walked into the room, and after months of it being inactive, I saw it foaming up like a monster. It was awesome. When that happens, does it take longer to age?

    Exactly 8 weeks later, I look in the carboy and it was fermenting again! This is both great and terrible because I was already making plans for turning into a dessert wine for Christmas.

    What would you recommend for something like that? I want to make a chocolate wine that I can give away over Christmas. Maybe with cherries in secondary. I'm not sure where to even start with something like that. I can get any cheap/middle road juice. I don't have enough wine tasting experience...

    Desert wine?

    Anyone have a good clone/recipe of any of the dessert wine kits that usually release about now? I was thinking I could get a cheap kit and modify it to have something close but I don't know where to start.

    What should I do to tweak my rose? I put strawberries in primary. Yeast was pitched two months ago but it still tastes like it's missing something. It was a middle of the road kit. Just not sure where to take it next.

    I don't think it's an issue, honestly. Just don't open it after 2 weeks. To maintain that co2 blanket. I've got one going in the bubbler right now. 7 weeks in and it's fine.

    I'd just wait it out. Give it another week. If it's still not clear, then you can look into what to add.

    Most people say to use the bubbler but I've done it in buckets with no issues. I dosed with kmeta at 3 weeks. Some have done 8 weeks in the buckets and been fine.

    RJS Super Tuscan - Skunky

    I had the same issue with my RJS Super Tuscan when I swapped the yeasts. I was concerned but everything I read said it fades with time. I'm 7 weeks in now, and it smells fantastic.

    Yeah, my results seem about the same. I wasn't surprised that it was better, but I was surprised at how much better it was. The difference was most pronounced around 6 months or a year.
