    Am I the only one that uses a 4 to 1 ratio for simple sugar. Used to use 2-1, but figured it diluted the wine more. So we slow boil 4-1 mix with a splash of lemon juice. Roy

    Fred & Stbig, I totally agree with you two. We have making now for over 10 years. Have quite the "Winemakers reputation" in our family and subdivision, everyone loves it. I still have some doubts & think it could be better. BUT I think that's what makes us better winemakers. Roy

    I'm trying my first E M, after 9 days transferred the Amarone into a 6 gal carboy & a 3L jug, with all the skins etc. Had to remove grape skins/raisins a few times as they were plugging up the neck & blowing wine up into the airlock. Leaving it for 4 days, hoping NO explosions when we get back...

    We make a lot of Elderberry blends, never did one with cherry, sounds great. With only 19 lbs of fruit to 6 gals your wine will be a "little thin". You could try an F Pack, or try a bench trial & see if a little back sweetening helps bring the Fruit flavor out. Roy

    Jim, we are hoping to go at least another 7 days. The winery is holding 69* with the cooler Fl weather. Just turned it down to 67* it's strange when the weather is cooler outside the AC runs less & inside temps rise even with stat at same setting. Roy

    Our W E Amarone is just 5 days old and hit 1.015, so slightly late I added the Chapilization pack. All looks good, fermenting at 71.5 * Smells awesome. Hope I can slow it down a little. Roy

    My Son is getting married this Sunday so I had David at Noontime Labels make some wedding labels for me. Bringing 30 bottles of at least 8 different wines, so I wrote the type of wine in pen. His labels look awesome! My pic & ink not so much! (That's why I buy labels. LOL) Roy. PS Thanks David

    Fred, I would go taller not wider, think wider would require more pressure on the screw to press. We like the 12" dia & 14 high basket. Seems to work great for the 8 lugs we press each year. Your wine cave looks great! Now besides owning Trawlers we are both builders too! Roy

    Fred, I bought a "kit" off the internet, like $79. It included all the metal parts including the SS bands & handle with screw. The inside diameter is 12" the height is 14". If you want I have a cd on how to build it, it came with the kit. PM me your address and it's yours. Roy
