    Using 6 g carboy for 5 g kit...

Is it really a common recommendation to only make 5 gal of wine out of a 6 gal kit?

Anyone with the Seville rack about to share what the end pieces look like?

    Costco Wine Rack

Do you have the end pieces on your Seville rack? Any chance you could post some pictures and explain how they work? The Costco rack did not come with end pieces so I'd like to see if I need something on the ends and then look at how I could retrofit something.

    Costco Wine Rack

Just put it together last night actually! I'll be bottling 12 gallons this weekend and loading it up so I'll let you know how it goes.

    What's for Dinner?

Made a red wine braised venison roast using meat from a deer I harvested and wine I made. Quite proud of that meal!

    Cleaning Carboys

If i have a carboy with a film that won't come off with normal cleaning processes first I try soaking in oxyclean solution for a few days. If that doesn't work then I'll fill the carboy with a cup of bleach and the rest cold water and let that sit for a few days. That has always done it for me...

The only white I have ever put through MLF is a Chardonnay. Only made Pinot Grigio once and did not put it through MLF

    Chilean juice pail tweaks

And do you think freezing and reusing in the fall is an ok plan? How much would changing the grape varietal affect the flavor of the wine? Like let's say I added Cabernet Sauvignon grapes instead of the Merlot.

    Chilean juice pail tweaks

I'm thinking about getting a lug of grapes and adding to my Chilean juice buckets this year. How much of a difference does the grape varietal I choose make? I'm doing a Carmenere juice, but considering getting maybe Merlot grapes. I would crush them by hand and put them into a paint strainer...

First racking: lots of leftover room in carboy

Oh totally agree I wouldnt top up that much with water! I thought you were saying you would never top up with water.

First racking: lots of leftover room in carboy

That's exactly what I was thinking. I was confused by the "universal no".

First racking: lots of leftover room in carboy

Why is it such a bad thing to use water to top up? Granted, I wouldn't use water if I needed a gallon, but I've never hesitated to top up with a few ounces of bottled water.

    Monty's Wine Making Process

Thanks for taking the time to read through! For the temperatures, I've read a lot about this and it looks like the general recommendation for grapes is to ferment whites at the lowest possible temperature, but reds a bit higher. Based on your comment though I'm going to revisit fermentation...

    Hi I'm Monty

Thanks for reading! I made a post on the General forum which lays out my process. Link to that post below. Hope it's helpful! One thing I've found is I never stop learning and tweaking my process. There is so much more I'd like to learn (wine lab type stuff in the near future) and improve my...
