    UH , it's a three gallon batch. I racked it off of the primary and had about a half gallon left over. That is in a pet bottle.

    the 6 cups of sugar yielded only SG of 1.040. I added sugar until it came up to 1.065. This will give me about 9.5%, ABV if I can get it down to a SG of .992. Wound up with 11 cups of sugar total.

    Got them peeled and cutup in the freezer. Will defrost tomorrow and place in my nylon bag. Getting everything gathered to start this .

    I brought home 10 pounds of local peaches. I can get lots more, I just didn't want to be a hog about it. I need about another 5 pounds to make my 3 gallon batch. "The Joy of Winemaking" has a nice recipe. I'll post the recipe later. now I got peaches to tend to.

    Would you give this a try?

    Just be certain that each jar has not lost the vacuum seal. Ball/Mason lids have a slight bow and they should be sealed under heat and suck the lid down when you put them up. I'd sure give it a try.

    I had a white cranberry that did the same. It took several weeks before it calmed down. It did make a VERY fine wine , just took a little more time. I would give it some more time. Patience is a hard thing to learn.

    I always use a nylon bag for my fruit . That way you can lift the bag and give it a squeeze , then place it back and push it down into the must.

    Calcium carbonate. If you have none you can crush a tums tablet to change the ph. Be prepared for a lot of foaming . Just thought I'd toss that out there. Very handy note for wines that are too acidic, like dragon's blood.
