    Daughters softball game this morning, running errands and put ribs on the smoker alot later than intended, 4pm. Another half hour and I'll wrap in foil, butter and a bit of beer. Should finish up around dark, I hope.

    I am heading up to PI Winery on Sunday to pick up some local Traminette juice, I'll report back on their Niagara juice inventory.

    Consumers Produce in Pittsburgh have juice pails for sale, many varieties although not sure what they still have in supply this late in the harvest season. If looking specifically for Niagara, 2 hours north of Pittsburgh, Presque Isle Winery in Erie, PA may have Niagara juice still available.

    Racked my muscato/malvasia bianca blend to secondary, SG was at 1.010. Probably press my syrah tomorrow if SG is around the same.

    Last bottle of my 2014 Chilean Carmenere. Best bottle of the entire batch. Had I known this wine would phenomenal at 2.5 years, I would have saved a few more bottles. Oh well, age truly does wonderful things to wine.

    Pressed my Carmenere this morning before everyone in the house woke up,ended up with 7 gallons total. Will rack tomorrow morning, add mlb and oak.

    Picked up 6 gallons of Carmenere and 2 lugs of grapes this morning at Consumers, the family helped destem, only took an hour or so. Yeast starter, enzymes etc added. Couldn't have gone any smoother so far. Used 71-B yeast and will age on heavy toast French oak. Trying to replicate a deep...

    Yes, I've enjoyed medium + or heavy toast French oak in Carmenere I've made before. This spring, I'll oak using one of those 2 toast levels again.

    What's in your glass tonight?

    Tried 1st bottle of my 2015 Chilean Carmenere/Malbec/Merlot blend. Exactly 1 year old today. Very good, much better than anticipated at the twelve month mark. Has a nice earthy/sweet taste with a touch of oak. Looking forward to this wine at 18+ months.

    Airlock fell off-what should I do?

    I had this happen to me over the winter with a pinot grigio, only my toddler nephew pulled the airlock out. Wine was exposed for atleast 12 hours before I found it. I dosed with k-meta. Wine was bottled in late February. We have had a few bottles and it turned out great, no ill effects.
