So what did Santa bring you this Xmas?

I recieved two wines. A mulled wine that I can't recall the name of. Another wine that seems to have great ratings on cellartracker, but I hadn't heard of it either. (it's at home and I can't recall the name of it) The big gift was a Taylor 414ce acoustic guitar with spruce top, rosewood...

    WTSO

Ah yes. I've used them, but I'm very selective of what wines I purchase from them. I was aware of some of their practices, but sometimes you can get a great wine at a great deal. I used to shy away from Malbec as a majority that I had tried, just weren't that great. (most likely because I...

    Merry Christmas

Merry Christmas all. It turned out a white Christmas after all. My buddy just send me this from his backyard.

    Lafitte Cork

I will email them again, but they ignored my email last time. :(

    Lafitte Cork

I wonder if you can buy 1,000 corks with two different branding on them. We could split 500/500. (or one branded and the other plan)

    Lafitte Cork

Nice. I emailed them about a week or a week and a half ago and they never responded. :( How longs does it take to have a branded cork to be made (including creating the die)

    What's new in your cellar?

I was just gifted a 1996 Penfolds Kalimna bin 28 Shiraz. (and a bottle of Maker's 46!) I think it might be time to drink it though rather than aging it longer.

How do you cork 375ml bottles?

Same same. The adjustment adjusts how far the cork goes into the bottle. (the bottom spring pushes the bottle up to the same height) After corking a 750ml, just put a 375ml in there and cork it! I do it all the time!

PBW / Oxyclean residue in carboy

I've never experienced this as I rinse the oxiclean after washing. Google around and I've heard people use starsan to help remove this, though I have no experience with it. If you add very hot water to the carboy, pre-warm the carboy's exterior with warm water before putting very hot water...

    Post a photo, any photo

When I bought my first set of really nice knives, I cut myself the first time i used it. My GF uses the knives and cuts her self at least once a month, but refuses to use the gloves I have. o_O

    Time to move to carboy

Once it's fully finished fermenting. (0.990 or so) Add your sorbate and then back sweeten. Then start aging it in the carboy. I like six months in the carboy then to the bottle, but of course. If you're in a hurry you can go into the bottle at eight weeks. I would recommend at least...

    Time to move to carboy

If you're following the directions, I wouldn't worry to much about how it tastes now. If you're still fermenting, you haven't yet back-sweetened which is necessary for dragon's blood. (other wise, it's EXTREMELY tart) Dragon's Blood is drinkable fairly quickly and it only gets better with...

How did you survive the snow storm?

I didn't leave the house and kept busy. Racked my Super Tuscan, Amarone, and Cherry Chocolate Walnut wine Took one bottle of the Cherry wine and added a bottle of cherry brandy to test my first Port wine. (Cherry Chocolate Walnut Port) Picked out, customized, and ordered four different wine...

    Cherry Port

Thanks for the reply. Actually, I had only created two bottles of it out of the six gallon batch so far. (using only a single bottle of the Cherry wine) I brought a 375ml bottle to work the next day and had several others try it. The flavor profile changed a bit. It softened from the...

    Cherry Port

About a year ago, I started a Cherry wine. (Actually, a Cherry Chocolate Walnut wine) I said I wanted to convert some of it into a port with cherry brandy. So, I went to the store and all they had were Cherry brandy that were over $20 a bottle. I asked if they had anything cheaper (cause...

    Lafitte Cork

Hmm. I keep my corks in a gallon ziplock baggy. When I went to bottle my Merlot and Cab, I noticed slight discolorations in the cork and when I tested one and pulled it back out. The slightly discolored areas were breaking apart. I immediately put off bottling and ordered more corks. This...

    Lafitte Cork

I wanted to do this, but I heard you need 1,000 cork order. I just do not bottle remotely that many wines in a year. I've already had to toss out corks I purchased last year due to you could see them drying out. I would pay the $100 for it if I could buy a smaller amount of corks.
