    New Sous Vide Cooker

I picked up a Chefman Sous Vide Precision Cooker on a pre-black Friday sell last Thursday. It was 40% off ($59.99, normally $99.99) I can't cook steaks in my apartment as it sets off the smoke alarm. I can't have a grill either, I'm on the 4th floor. (they have grills I can use, but they are...

    LLC or Sole Proprietorship?

This depends on how much money your worth in today's financial atmosphere hah. If you're rich enough, you can be the Harvey Weinstein of financial legal issues. I watched it happen in the years I worked in Manhattan's financial district. Though, it looks like Paul Manafort's time has run...

    LLC or Sole Proprietorship?

In my IT consulting on the side, I was sole proprietorship for a long time. I was consulting for hourly rates, but once I started being asked to architect, buy and, build their Internet Infrastructure. I switched to an LLC for personal liability protection. If I were going to sell my wines...

My latest work. This is The Pleiades, AKA Messier 45 (M45), or AKA The Seven Sisters. It's a star cluster located in the constellation Taurus not far from the Constellation of Orion. It is visible to the naked eye. This consist of about two hours of total exposure combined together. It was...

Do you like your own wine?

So far the best wine I believe I've made was a off-dry Washington Riesling. Though it's definitely not in the class of some really good Reislings I've had. Though it makes me smile every time I open one and have received a lot of positive reactions to it at our wine tastings. (and not just...

    Hello from CT

Maltose in Monroe, CT sometimes. There is a place not far from my work in Pleasantville, NY also called I believe Prospero Grapes, though I haven't actually bought anything from there as of yet.

To Stir or Not to Stir - Juice Buckets

Nice! I toy with electronics also. Both Audruio / RPi based and straight analog electronics. Currently working on more ham radio stuff though. If you get it working, I would love to hear about it.

To Stir or Not to Stir - Juice Buckets

This is due to the cooler slower fermentation correct? I read that in one of my winemaking books. Reds can benefit from warmer shorter fermentation and whites to longer cooler fermentation. That said, I heard that fermenting whites in this fashion can provoke stalled fermentation in some...

Everyday during primary. The fermentation process requires oxygen.

RJ Spagnols Aging in a wine fridge

300 bottle fridge? You should have built a walk-in! Then I could age my wines there too! Actually, the building I work in has a wine storage company attached to it. I just bottled another wine with a second one on deck. The wine is really building up in my walk-in closet. I think I'm going...

    Post your labels here

Well, I normally probably wouldn't have made a Merlot unless it was for blending purposes as I tend to like wines with more punch. That said, the Stag's Leap Merlot had such wonderful reviews here that I went a head and made it. I must say, I'm extremely happy with it. It's only a year old...

    Headspace after primary fermentation.

This is true. Gases will blanket (layer) "with time" *IF* it is left undisturbed. Heavier gasses will sink and separate beneath lighter gasses. Liquids have this same effect, but they must be left undisturbed for this effect to happen. People ask why CO2 in the atmosphere doesn't sink to...

    Your favorite corkscrew/puller

Yes, this is what I was referring to as the Vinomaster. They are nice as it's drive and pull, then squeeze and pull to remove the cork, but as I said. On several occasions, when I was trying to drive it into the cork, it drove the cork into the bottle. :(

    Your favorite corkscrew/puller

This is the same one I use. I used to use a Vinomaster wine bottle opener which was nice, but sometimes it would drive a cork right down into the bottle. That got old quick and I went with the premium waiters corkscrew with the double hinged fulcrum. (as others have pointed out, the fulcrum...

Other Best Kit For Dry, Full Bodied, Tannic 'High End' Wine?

I'm a huge Amarone fan, but so far my expectations have been very underwhelming so far with this WE Amarone kit. Being an Amarone, I expected much more body and flavor, but so far it tastes quite thin compared to most Amarone's I drink. My WE Lodi Old Vine Zin, WE Lodi Cab, WE Stag's Leap...

Other Looking for definitive instruction - Degassing /w all-in-one-pump

If you aged it for six months and have been vacuum racking it. Odds are good it's degassed. How much k-meta have you been using? Lots of k-meta can cause foaming too which is why rack and dose with k-meta and then wait a minimum of a week before will even attempt to bottle it.

    bag in a box

Says for storage up to 12 months. For me, I think that would only include my fruit wines which generally drink more openly than my grape wines. I try to hid my grape wines so I don't drink them up too quickly!

When you guys keep saying, "Everyone likes Starfish" and cringe and then laugh at the same time. Though not because of the pictures or your reference, but because when my buddy's brother says Starfish, he's actually referencing your rear end orifice. lol (ie, blow it out your Starfish)
