    Well done KevinL. In Northern Illinois, they are definitely not Cabernet. Could be some Marquette as a possibility. But no way to tell if they produce red or white grapes.

This cold snap is a good example why it's not a good idea to try varieties marginally acceptable in your zone. Imagine working hard to bring your vines into production, and have them killed back to the ground...

    I have chickens, and I have grape vines. I keep my chickens out of the grapes. I would say they may well eat the foliage and their scratching around could be hard on the roots. If you had a few chickens and an an acre of grapes you would probably be ok.

    I would suggest eliminating the bottom two rails. One is sufficient at the top. The top rail should be minimally five feet off the ground, and train your vines so the new growth trails down each year.

    I ferment mine on the 'pits'. They are basically as hard as wood and stable. Don't add any water, but you might need to top off early in the ferment with some kind of juice. I used beet juice last time.

    My vote is a height that is comfortable for you, when working with the vines, like pruning, spraying and harvesting. Minimally they need to be five feet. I have some at seven feet, because I walk under them frequently in my yard. Take a look at Geneva double curtain while you are at this stage.
