    Caramel Apple Mead

I snuck a taste last night. Definitely a dessert mead! Much darker than I expected, and like jmac said above it's very braggotty. In a way that is quite enjoyable right now. I can't wait to see where this is in 6 months.

    Caramel Apple Mead

The DME clumps are all gone. Nice to know I don't have to steep as much next time. I'll be transferring again (lots of lees still) this next weekend and then let it sit for a while. What I'm tasting so far is good. Different than the melomels I normally make!

April 2017 Wine of the Month Club

Racked it today, adding a touch of honey (tablespoon or two maybe) and topped it back off with more tart cherry juice from Trader Joe’s. Along with Sorbate and Campden to make sure it didn’t kick back up again. I like the taste. Plan is to bottle in three more months or so. I like JD how it’s...

    Caramel Apple Mead

Apparently I didn't read the recipe very well. I was supposed to age it in the secondary for a month or so, then dump it on top of the honey and add the sorbate. Instead I dumped in from Primary into secondary on top of 8 oz of honey and some sorbate. But the yeast was still going well and it...

    Caramel apple Cyser

How has this ended up? I am making a braggot that is a caramel apple mead. I used crystal malts that were simmered in the apple juice to get the caramel flavor. Just started, so it will be a while before I know how mine ends up. Also, you are calling this a cyser, but there is no honey...

    Caramel Apple Mead

Time for a follow-up. 1. I should have started with more cider. The original recipe called for apple juice, and I thought I'd go big using the cider. Well there was a lot of particulate that has settled from the cider, leaving a lot less liquid than had I used apple juice. I think I'll...

Do you like your own wine?

I record music as a hobby. I used to play in a church band, and I recorded all the individual tracks a couple of times a month so I could try and mix them. I always wanted to hear what we sounded like from the listeners perspective, which is very different than the stage monitoring mix. For a...

Berry mead, and a question about starting SG

And I forgot to add: this is being called “Bumble Bee Berry Blast.”

Berry mead, and a question about starting SG

I haven’t updated this post in a while, so I thought I might add some notes. First - this is by far my favorite recipe I’ve made by far. I bottled some of it over the summer and tried some then. I’ve also given away several bottles that were very well received. I had another 1 gallon carboy...

    Caramel Apple Mead

I added the DME when the wort (I guess I'd call it that) was too warm from steeping the grains in the apple cider. Here's a link to the crystal malt I used. https://www.northernbrewer.com/briess-caramel-60l-malt That's what is giving the caramel flavor. I've caramelized sugar before (when...

    Hello again from Michigan

Welcome back! Good luck with the current batches. I wish I had the wife's help in making wine. Right now I get to do everything myself, which gets tiring after a long day. . .

    Caramel Apple Mead

Well I've started my most adventurous mead to date. Based upon a recipe I found on another website. Caramel Apple Mead - 3 gallon batch 6 lbs mesquite honey fresh pressed cider to 3 gallons. (I think it was from Hartland orchard out on I66. About a third Stayman apples according the guy...

Where do you get your honey?

I use Trader Joe's honey. It's $4.00/lb here in the DC area. They don't have a lot of varieties (Mesquite, clover, turkish), but it's the most cost-effective "real" honey I've been able to get. (I use "real" based upon one questionable study that says they found pollen in the honey from...

March 2017 Wine of the Month Club

I just recently tried another small bottle. It’s gone from “undrinkable” to just “unpleasant.” Not exactly what I was going for! I didn’t try and add any honey to it. NOt sure it would have helped. I won’t open another bottle until I get to a year out. So far this is the only batch I’ve...

    Hello from Toronto, Ontario

Welcome to the forum! Ask lots of questions. Post what you are doing. There are some very helpful and experienced people here. (I'm opinionated, but not really educated yet. Take anything I say with a grain of salt.)

    Blackberry Mead (First Attempt)

Following up I put too much water in, and it's weaker than I wanted. Total Honey was probably a hair under 3 lbs. Added nearly 1.5 lbs of Trader Joes Turkish Honey. Starting SG was 1.080. Last night the SG was 1.000, and I took out the fruit. It seems like there was nearly 1.5 gallons of...

    Hey from North Carolina

Once you have several different wines it's much easier to let them age some. I can tell you that your strawberry wine will most likely get a lot better with age, but if drinking some gets you excited to start more batches, then do it. After 10 months I'm just now getting to the point where I...

Sorry for your loss. I'm sure not an easy decision, or at least not a comfortable one.

April 2017 Wine of the Month Club

So someone asked me on the other thread how this was coming along. I think the final SG (after adding some water) is 15%, and the SG is 1.014. It’s definitely still hotter than I want, and I can’t tell much of the vanilla. I left it on the bean for a month, and in retrospect should have gone...
