    Yeast

Rusty, you may want to google West Virginia wine trail. I did that here in Alabama and was pretty surprised to find so many wineries this far from Italy (lol). Where there's wineries, there's usually empty bottles for sale and maybe juice or grapes.

    Water

Someone please explain the bad side effects of using distilled water - since I've used it and it's in a carboy. Thanks,

Is my wine fermenting? And is this floating stuff a problem?

I am more addicted to making wine than I am of drinking it. I love to give bottles to friends and have them brag about how good it is. Of course it's all a matter of personal taste. Btw, we do love sitting outside right before dark and sipping on a glass :) Enjoy your winemaking, keep notes, and...

Foul brew or nothing to worry about?

Okay, being the curious type I had to look it up: Schopenhauer's Law of Entropy: If you put a spoonful of wine in a barrel full of sewage, you get sewage. If you put a spoonful of sewage in a barrel full of wine, you get sewage.

Is my wine fermenting? And is this floating stuff a problem?

Trish - be warned - you fixing to get advice from a newbie; From what I've read on here you don't need to be worrying about the airlock not bubbling. Nor can you use that fact to determine whether or not the fermentation is still active.

First attemp at making wine and need some advice please

Ste - Welcome! I to am a beginner. If I were looking at that image and it was mine - I'd be concerned with something getting into the air lock and stopping it up.

    Bottling & Degassing

crabjoe, I'm gunshy (lol). My first bottling experience had me cleaning up a lot :) Once the bombs started going off I moved them to the shed and place the bottles in totes.

    Corks and a corker.

It's easy for some of us to get hooked on the process of making wine. :)

    Bitter taste

He and I were talking this morning. It had been in the primary fermentation bucket about 2 weeks. He has or is going to rack today. I suggested that since it's such a young wine that in itself could be where the taste is coming from. I also warned him that wine "making" is more addicting than...

    Bitter taste

A buddy of mine is trying his hand at making wine. I think in his process he probably busted quite a few seeds and they are now 2 weeks in the must. He is going to rack tonight and says it tastes pretty bitter. If the seeds, or anything else, is the cause is there a corrective action he can...

    Bottling & Degassing

I've had wine in some carboys for a while now. These are the same ones I've talked about a while back. I don't have any notes and I have been trying to figure out if it's ready to bottle. When I shake it I get some "mild" fizz out of it as in carbonation. The other day I did an experiment. I took...

    Corks and a corker.

Intheswamp, You watch out for those sugar ants around there. We got 'em bad in central Alabama. I lost 4 five frame nucs to them and just recently overnight they invaded my house and drowned by the thousands in one of my two 5 gallon buckets of fresh apple juice. Is the trailer climate controled?

a baffled -- and maybe desperate -- beginner

Good point about the nose scooter68. This is a thought coming from a novice. In the future bungie cord a towel around the bucket during the primary fermentation. From my understanding during the primary the yeast needs a lot more oxygen than during the other stages.

Help! First batch mistake put in

Yeah sometimes it's more simpler to just start over. I just recently spent countless hours attempting to make some apple wine. The next morning when I went to add some yeast nutrient I discovered one of the two five gallon buckets of juice was full of sugar ants, alive and drowned. I managed to...

Help! First batch mistake put in

I am also new at this wine making adventure but what have you got to loose by proceeding forward with the batch? If it were me I wouldn't chunk it. Maybe some of the others with experience may have a different take on this.
