    Does anyone else in here use Zorks? That's all I've ever used, my first wine making startup kit had them inside, and they were so easy and cheap, I just continued on with them. Now it seems like they're REALLY hard to find, and when I do, their price has doubled, making them less attractive...

    Brothers Drake just released a PBJ mead.. the taproom I was at didn’t have it (boo!) but they had another I hadn’t sampled - Bergamot Blue. My kudos to Brothers Drake, I would never have thought to ferment pencil shavings!

    Strawberry wine

    Your abv is a little high for the more delicate flavor of strawberry. Try backsweetening with strawberry juice to increase the taste, and hopefully the “hot” will mellow with enough time. I make my own juice by using frozen strawberries and sugar.

    I recently bottled a chocolate strawberry that I, too, had aged on a 100% ghiradelli bar.. I thought I messed it up too. Now, it’s fairly amazing. Next time I want to add chocolate, I’ll do it the same way!

    Only about a month, honestly. I’ve had wines that take much, much longer to get to the tasty point - if ever. This tastes drinkable now - but I’m waiting like a good little vintner, because it’s also so, so young and it will get even better!

    ... because vodka can/will fortify your wine, and sanitizing solution... is not tasty.

    What’s your 5 yr winemaking plan??

    I just make whatever, whenever. :) biggest batch I’ve done is 3 gallons. I just like to constantly make new things, so I do a lot of small batches in case they’re bad. Although lately I seem to be making a lot of 2 gallon batches. Wish they made 2 gallon carboys!

    Pumpkin Pie wine

    I made Pumpkin Pie wine that we drank last thanksgiving. Use more pumpkin than you think you’ll need, mine was a bit thin. I also added apple juice. :) it’s certainly a different sort of wine... I’m aging a cranberry/pomegranate for this year.
