    Special Project with 2013 Vino Superiore Sangiovese

    Bumping this because, although its a bit early, I bottled the Nebbiolo about 3 weeks ago. The tannins were SUPER strong. Made me pucker. Decided to crack a bottle tonight just to do an "approximate month" status check and the tannins have calmed to an enjoyable level and everything is great.

    If keystone offered de-stemming, crushing, freezing and shipping of the fresh stuff I'd buy a lot more from them. the Vino brand they have is GREAT. It's just pricey and limited in variety.

    I recommend it. I'm the type that likes to be "involved" in the making. So punching the cap down, measuring, and the stuff that's a bit more involved in making it from grapes scratches that itch for me.

    @pgentile I've done 3 frozen musts so far this winter. A nebbiolo and Sangiovese from vinosuperiore and this one from winegrapes direct. I may be wrong (I dont have the ability to test PH yet) but I believe winegrapesdirector adjusts the overall harvest and then packages it into 5 gallon buckets...
