Is moving to secondary fermentation a benefit for white kits?

I would appreciate some feedback as to the benefit of racking for secondary fermentation. Some of the kits instructions do not have you rackfor secondary fermentation. I am wondering if the racking is required and what is benefit do you get. From what I have been reading keeping as little...

    IOC Be Fruits

I was wondering if anyone has used this yeast strand and what was their impression https://scottlab.com/fermentation-cellar/yeast/ioc-be-fruits-yeast-015241

    Double Oaked Chardonnay!

As far as K-Meta, my process is a bit different from conventional since I use FastFerment conicals. Primary and secondary are all in one vessel and both the gross and fine lees fall out into the collection ball. Once I move the wine to a carboy, after 2 months for white (3 months for red if...

Homemade vs. Commercial and what I am doing to close the gap

There is a good article on process of wine making for aromatics that showed up in my email today. It doesn't go into yeast but does state a lot about temperature and process and I will do a few tweaks #1) for white primary fermentation is done <60F and closed fermentation...

Homemade vs. Commercial and what I am doing to close the gap

If your interested in the Ss Brewtech has a 10 gallon, jacketed brite tank, there is a 15% off one item and they do offer the brewtech. Use code UPGRADE. https://www.midwestsupplies.com/products/ss-brewtech-brite-tank-10-gal-1 Since I just started, the old used craig's list refridge will have...

Homemade vs. Commercial and what I am doing to close the gap

Question: Now that it has be suggested to target a lower SO2, how are you planning on implementing this? Since I am fairly new to wine making, I'm not sure how much goes away over time in a glass carboy. Do you target the high end for the PH and check every 3 months? Or put it slightly...

Great info. Did he state what the target addition of SO2 for white wines or is the 30 for both red & white wines?

    What's in your glass tonight?

This is one of our go to wines at Total Wine. It is in the red blend section but definitely has a lot of Cab. The Vortex is 11.97 and is dryer than the Townsend red wine at 14ish. They also have a red wine with a table picture on the front that is slightly cheaper but lacks the body.

Fermentation temps - Chardonnay kit - Premier Cuvée.

I found an old used apartment refridge on craig's list for $100. I took all the drawers out and put a thick plywood floor board since there are bump outs for the drawers. The primary fermentor easily fits and a six gallon carboy with an airlock fits just fits. I would definitely measure...

Film on inside top of carboy using Allegro yeast

Just a follow-up.... nothing wrong here. This kit is the best I have made so far from the early tasting. Likely there was some foaming that I did not notice when transferring to secondary. We have sipped off the wine from the bentonite slurry after racking and then had a glass of Simi Chard...

    Has anyone tried Pluxcompact Bentonite?

Just wanted to follow up on this. I purchased Bentonite KWK (AKA speedy bentonite). I mixed it in the kit before pitching the yeast. Fermentation is almost complete and there is a large amount of lees. I will be racking this to a 5 gallon carboy. So even if the journal testing indicate less...

Film on inside top of carboy using Allegro yeast

This is my 6th batch but my first time using Allegro yeast with Optiwhite and fermaid O 1/3 in. There has been no foam as advertised. I have moved it to carboy for secondary fermentation 6 days ago. I am starting to see a film on the inside top of the carboy but none on the wine. I know with...

Thanks. I will use this as a guide to determine SO2. I have yet to try fresh grapes perhaps next year. I suspect as life you deal with the cards given and do your best.

    Double Oaked Chardonnay!

Thanks. I did noice that and have since purchased a PH meter and the Wine Titrets. I found these two sites that I plan on using as a guideline. https://winemakermag.com/resource/1301-sulfite-calculator...

    Double Oaked Chardonnay!

Yes. it helps because my few batches afterword, I only added the packet of Meta and nothing more and I don't have the aftertaste in these at least yet. I definitely will be mindful of any additions. Also good to know about only racking once after secondary and letting it hibernate for 6...

    Double Oaked Chardonnay!

Just wondering if the difference in outcome between Elizajean and Crushday may be due to the potassium metasulfide regime???? Do both of you have notes or know what your potassium metasulfite protocol is? Do you calculate the required addition or just add the packet included in the kit, with...

    What's new in your cellar?

There ia an app called Painnt that enables you to modify your pictures to a more art version form. There are many different styles to apply. Some are free (and the free ones change over time). The ones that are not free are nominal.

Make it your own, 3 Winemakers, Chardonnay 2017

Good to know. Thanks! I ordered up some from Label Peelers to add to a few carboys. Based on the few kits that I got brewing, I think the oak in primary doesn't do much for oak flavor. They have more of an Avant Chard (unoaked) vs Kendal Jackson (oak) flavor profile.

I have never used the spirals only the chips in a kit. How do you sterilize the spirals?
