    I vacuum transfer and use a kink in the transfer line to create an expansion valve to decarb. Ive had multiple wines fail to decarb over time so I always use the vacuum to ensure no retained CO2. To frustrating to pop a cork on fizzy wine. Jbo

    I’m my opinion, whites are much more representative of their respective grapes/styles than reds when talking kits(even in the smaller format kits). I think it has something to do with the extraction of the reds. And they also (generally) need less aging, so you get to enjoy your efforts...

    I’m with mason. I’ve done both and I’m not sure I could tell you the difference in a “fresh bucket” and a midrange kit. I will say that I’ve found all of the En Primeur skins kits to be superior to the (admittedly few) buckets I’ve done. Jbo

    I just leave mine. You’ll see little to no air lock activity. If the temperature or barometric pressure change, you may see some little activity again for a short time, but that’s just some natural degassing. Jbo

    I haven’t checked sg. That’s a good idea, but I know it has residual sugar from the f-pack. My plan is to pour it onto the grapes from an active ferment after a first racking. I’m hoping the already active yeast will ferment out the little remaining sugar. Jbo

    I agree. I like the bags and think they’ll easily last a year and more if you make sure to get all the air out. The only real problem with bags is: it ain’t gonna last. Too easy to sample. If it’s going to have a chance of aging for me, it’s gotta be in a bottle. Jbo
