    I have a mead doing the same thing. I’m just letting it ride. I’ll be checking the sg this weekend and let you know if mine dropped. Saturday will be two weeks since the last time I checked.

    Like to know how it turns out with the Oak chips added. Checked mine this morning and it’s bubbling away. Might add oak to a gallon at secondary just to see how it turns out.

    Well tonight (24 hrs later) added 12 cups white sugar mixed in very well to the 5 1/2 gallons of pear juice which brought the sg to 1.092 added yeast nutrient and energizer and Went with the EC-1118 yeast. To be continued

    Pgentile, my thoughts exactly. Before I pitch the yeast today I was going to add white sugar to bring the SG up to where I’d like the abv to possibley be. Thanks everyone for your input and comments.

    Thank you all for the replies I have 5 gallons of Apple, Merlot, Riesling, Mead and Blackberry going right now and will be slightly backsweeting all of them. Again, thanks for the info.

    I made an apple wine that just finished in the secondary and I plan to stableize and rack one more time this weekend. The question I have is, after I rack and add meta and Sorbate, because I will be backsweeting, can I top off the carboy with fresh (pasteurized) apple cider right away or wait...

    3 gallons of sweet black cherry

    Right now the alcohol content is probably going to be very high in this Mead I believe because, I started with 18 lbs of honey in a 5 Gallon Carboy and pitched a champagne yeast. I will check the alcohol level when I rack later today. This was more like an experiment with that amount of honey...
