    I was just wondering about this the other day. I've got about 5 meads that I have to get going this winter but this is going on my list of items to try. @Deezil do you think bulk aging it for a year, then bottling it and letting it finish out would work as well?

    Oh that sounds downright heavenly. If you can get your hands on some orange blossom water, I'd imagine a little bit of that added at the finish would be pretty nice as well

    I do it with Dragon's Blood. We can tell the difference and prefer it over using regular sugar. I've not done it with skeeter pee but I would think lemon and honey would pair nicely.

    It's such a shame, since persimmon pudding is one of my favorite things in the whole world. I'm going to attempt to save this one by adding a bunch of things that would taste good paired with "bread." So lots of spices and vanilla. If worst comes to worst, I'll get some flavoring extracts...

    I need to taste mine again and see where it is at. Last time, it was terrible. All yeast. No honey, no persimmon, nothing. Tasted like bread. I added a cinnamon stick to it a couple of months ago. If it still has zero persimmon taste to it, then I will spice it up and finish it off and bottle.

    You will want to use the same items (stems, leaves, roots, etc) that you would use in making a cup of herbal tea. In this case, a small bit of green probably won't matter too much, but I don't think I would use any leaves or stems.

    Are you wanting to do wine or mead? I've found a good rule of thumb to be anywhere from 1 to 2 pints of fresh flowers per gallon.     You can add things to secondary (or tertiary) at pretty much any time. I've added fruit, spices, etc, to bulk ageing meads that were over a year old. Depending on where he deploys to, he may be able to pick up some interesting dried fruit and spices and bring it home for experimentation...

    Oh man, it's a toss up. I did Cactus Flower wine one month for WOTM experiment. It turned into pink, fragrant, alcoholic snot. It was just like the goo we used to play with back in the 80s. Smelled lovely though. Manthing had to dump it onto the compost bin because I couldn't even see it...

    Also, I wouldn't bottle any time sooner than 9 months, but that's just me. If you are impatient you can make some Dragon's Blood in the meantime and that should last you a bit.
