April 2017 Wine of the Month Club

I've got a jump start on this month's experiment. I just racked my strawberry melomel and in the past, I've thrown the ingredients for Dragon's Blood or Skeeter Pee right on top of the lees and let it go. Yes, I know I run the risk of off flavors, etc, but it has always turned out nice for...

April 2017 Wine of the Month Club

Hello everyone, This is open for anyone to join at anytime in April by making a 1 gallon experimental batch. Post your recipe and step by step instructions. We love pictures, so any you take will be greatly appreciated. We hope that at the end of the month you will give us a breakdown...

    Is secondary timing crucial?

QA23 ferments pretty slow and with your temperature you should be just fine. I would not rack at 1.06. First the fermentation is too active and second, you'll be leaving a lot of good stuff behind.

    Yet another Strawberry Mead!

I'm shooting for 7 gallons finished out (fingers crossed). I'm using bags for the strawberries so that should cut down on the racking losses just a bit. I'll be happy with 6 gallons and one gallon for experimentation. I'm guessing this will be fairly drinkable in 6 months, we will see...

    Yet another Strawberry Mead!

Manthing has made quite a bit of noise about not having any strawberry mead left in the house for months. MONTHS, you guys! I'm a terrible partner. Today I have set out to rectify this egregious crime against the household. I didn't feel like breaking out the huge brute container for this...

    First batch of the 2017

Eh, above is all I've ever done to my mead and it turns out fine.

    First batch of the 2017

The yeast needs oxygen throughout those first few very busy days, so yes, I attach a stirrer to my drill and mix a minimum of twice a day, regardless of what I'm making. Once SG falls below 1.02 or so, I lay off stirring so that lees, etc, have time to settle for a few days. Then once I'm...

    Fig wine

Oomph...no idea what to do here. Did you add any pectic enzyme? I would probably add more water and more pectic enzyme but without actually seeing it, it's hard to know what's going on.

    Carrot-Ginger Redundancy

I'm actually not a massive fan of carrots. But the first time I had one that I actually grew in my garden...holy hannah. It was like biting into perfume. The smell is so floral and rich. I grow some every year for the Manthing and the chickens. It's too early for them now, so I'll likely...

    Carrot-Ginger Redundancy

This is more or less the one I was eyeing. Ingredients: -10 g dried chamomile -8 g dried mint -2 black tea bags -5 lbs carrots, chopped but not skinned (you can save these to eat!) -handful of raisins (optional) -2 tsp yeast nutrient I would cut out the raisins and mint, leave the...

    Carrot-Ginger Redundancy

This has me so excited! I've been wanting to do a carrot mead. Any interest in adding this to our March 2017 Wine of the Month Club thread?

March 2017 Wine of the Month Club

I started pretty high here, but SG is only down to 1.06. This just seems soooo sloooooooooow.

    Sweet Red wine

I've been taking a look at some of my favorite sweet red blends and it seems homewinery.com will carry one component of the blend but not the other. Have any of you made a sweet red from concentrates? How would just a plain sangiovese taste if I made it off dry? (probably around 1.015 or...

    Ready for Snowmageddon??

The high today is going to be 69 degrees. On the one hand, I'm jealous of all the snow you guys are getting. It being this warm in Feb and March makes me shudder to guess how many days over 100 we will have this summer. On the other hand, I'll be putting plants in the ground in the garden...

    Vintner's Best Blueberry concentrate

Right now I've got a blueberry mead going and I'm using BM 4x4. So far, so good. I've been really diligent about figuring out the yeast's nutritional needs and exactly how much nutrients to add at my sugar breaks, etc, since I started making mead and it has made an enormous different in my end...

February 2017 Wine of the Month Club

I felt sorry for this poor neglected no participants month, so I went ahead and started, albeit 14 days late! I want to keep in a style of using ingredients available in ancient Babylon or Jerusalem, so I'm using pomegranate juice, dates, and honey. I'd like to add another herb or spice but...

Cherry mead from Trader Joes Tart Cherry Juice

I would add all the cherry that you want, take an SG reading, then add enough honey to get you to 1.10 Otherwise, sounds like you have a good plan.

    Vintner's Best Blueberry concentrate

Taken off product description page: Stir the crap out of it, preferably with a drill attachment, then add some nutrients to it. If it persists after secondary and splash racking, then you can stir it with something copper and it should take care of the rest of it.

home winery vs vinter's best fruit concentrates

I've used several from each company and loved all of the finished products.

    April 2016 WOTM Club

This will be bottled next month. It's not as clear as I would like so I'll hit it with a clearing agent and back sweeten it. So far, I'm pretty pleased with it. eta: Well, I've attempted to remove this photo so I can add a proper one and the site tells me I don't have permission to...
