RJ Spagnols Cause of off smell?

It's alright to use yeasts that are not included in the kit. I do it often. You just have to know how to deal with them. Part of our duty in these forums is to share knowledge to make us all great vintners! ...and, of course, to get a good laugh here and there.

RJ Spagnols Cause of off smell?

BM4x4 is a combination of BM45 and some other Lallemand yeast strain. BM45 has high nitrogen requirements and can produce H2S under poor nutrient conditions. So, it is recommended to feed the yeast with nutrient additions. Perhaps this is the reason for the off smell. My "rule of thumb" is to...

    New Wine Room

John, looks very cool! I have a question about the floor drain: Is that a storm drain? ...or a sewer drain? If it is a storm drain, I would think the building inspector would have a problem with it being inside the dwelling where chemicals (such as floor detergent) can be disposed.

    Auto Siphon Fix

I run hot water through my autosiphon to give it a quick rinse before cleaning. Blew out the flapper on the big one by turning on the water to high. Fortunately, the flapper was not damaged. Just a pain in the butt to get it back into place.:ft

It begins... RJS Cellar Series Cabernet

The 6.5 gallon carboy offers enough room for degassing. But, you are correct, I did not mention it. Good catch!

It begins... RJS Cellar Series Cabernet

Here is my process, which works out very well for me: 1. Perform Primary fermentation in a bucket. 2. Rack to 6.5 gallon carboy for final fermentation when SG is between 1.010 and 1.020. 3. When fermentation is complete(wine is "still") wait one week for completed fermentation to stabilize...

How are you making your wine labels?

olusteebus, Sorry, I should have qualified that statement a bit more. Been using the same program for 20 years now. It was much, much cheaper before Microsoft bought them out. Think the original price was around 40 or 50 dollars. None the less, there are a lot of great programs out there to...

How are you making your wine labels?

Zazzle looks pretty cool! I only put nice labels on wine being given away. Otherwise, I use a small mail return address label. For the nice labels: I make my labels on an Epson R380 Printer with a Media Street (http://www.ink2image.com/) Ink Flow System. The "up front" cost is high (about...

RJ Spagnols Grand Cru Malbec - sweet, minimal body

I made this kit around May/June time frame. Did not use the oak, but did use a different yeast: Lalvin D254 and raised the fermentation temperature to 85 DegF. A yeast like D254 requires nutrient additions. I performed these at 1.060 and 1.030 So far the wine tastes all right, but expect it...

Need Creative Way to Raise Must Ferm. Temp.

Cover with a large tarp. Use a few chairs (or something of that nature) to create air space around the plastic barrels under the tarp. Make sure the tarp reaches the floor all the way around. Now, you can use one of those small electric heaters with a built in fan & thermostat. I have the same...
