    Picking grapes before rain comes

Don't know what your GDD numbers are for North Carolina but it would seem like you would have time to wait it out and let things dry out a bit. More hang time is especially good if you have not reached full ripeness. Do you have a pH number? That would be a big number to know. Also Cab Franc...

    What's for Dinner?

Just a corn tortilla (pre-fry in oil if you wish to soften a bit) in the bottom of a small CI pan, add a couple of fresh roasted (peeled whole green chile's) stuffed with a nice amount of oaxaca cheese in each one. Then a nice pour of red chile (sauce) over that and top off with some cheddar...

    The Bread Thread

Mike, KA makes a bunch more models these days than they did 25 years ago. Check/compare the wattage of the new one vs your old one. You might be shocked. Thats why some are $299 and some are $599.

Opening a winery and vineyards--lessons learned?

If you know Paso you know you go to Daou mainly for the winery, the views and the charcuterie board. Somehow they sell almost 600,000 cases of "low quality" wine a year.

Opening a winery and vineyards--lessons learned?

Turley has kind of become the gold standard for Zin over the years in the area. Carlisle as well but saw they are shutting down which is really sad. Some of our favorites over the years have been: Adelaida Austin Hope Calcareous Daou (incredible views/winery) Epoch Jacob Toft McPrice Meyers...

Opening a winery and vineyards--lessons learned?

Those were our favorites as well. The rumblings our server relayed to us was that the new owners already had said they wanted to increase production way, way up. That means your now peddling a mass market wine and you'll be seeing (unsold) bottles in your local grocery or wine stores at some...

    Higher Brix or Lower pH?

No, a starting pH in the range of 3.5-3.8 is the goldilocks range. TA is also important and should be measured. It is important to note that when a wine has just finished AF (alcoholic fermentation) it will be loaded with carbonic acid from trapped CO2 which will temporarily lower the pH of the...

    Higher Brix or Lower pH?

3.5 is actually a little on the low end for Merlot or any red vinifera variety grown in a warm/hot climate. I would let them hang until they are a little higher myself. 3.6-3.8 would be perfect IMHO.

Opening a winery and vineyards--lessons learned?

10 cases! We have been going to Paso 2X a year for about the last 5 years. Its a close 3 hour drive from our kids/grandkids in SoCal so we can do a roadtrip visit and head up during the week when its less busy. We avoid the mass market wineries and stick to the smaller 3-5K case wineries for...
