    I just did this kit and also was at 1.08 at the start. I bumped it to 1.09 with some corn sugar. This kit also has a larger than normal skin pack, so more extra sugar is to be expected from that. First taste was promising!

    I would continue at least rocking it back and forth daily until maybe the 2 week mark. Skins should be sunk by then.

    I have done the Classico. It comes with more juice and only dried skins. I have yet to open a bottle of it.

    The skin pack in the barbaresco was definitely larger than normal. That being said, I got way more wine into my glass carboy than usual.

    Same here. Although, even not using sorbate I still feel there is “kit taste”. I would agree though that this is simply a young un-aged wine as I have made plenty of great tasting wine.

    I am sure you are correct and the color is from the extra time on those oak chips. I fermented mine for maybe 2 weeks and it’s golden yellow.

    I believe the kit manufacturers add the EC1118 into the box and have you add it as an insurance policy. EC1118 is a workhorse and will pretty much ferment anything. Basically reducing the chance of user error and ensuring even novice winemakers get a fully fermented wine. I don’t think it will...

    RC 212 yeast

    I think it’s rated for 14% but will likely go even higher. You should google Lalvin’s yeast strain profiles. There is a reference out there that runs down their yeast and what characteristics they bring out.

    I wouldn’t add the EC1118. The RC212 should get you to dry no problem. Just my 2c worth.

    I have purchased bentonite that dissolves fine. If these kit manufacturers are giving bogus bentonite out, buy a container and use that. Most of that stuff is dirt cheap too.

    Crazy. Oak and oak powder are easy to distinguish. Sulfite looks like salt. Sorbate looks like really big grains of salt. Bentonite is brownish tinted and grainy. Not sure this is helpful at all but can’t believe you have random unlabeled packets.

    Regardless of what they are, they should be labeled. I have never come upon a packet in a kit that was NOT labeled.
