    WineXpert 2016 Dessert Wines

Sorry, but due to not having enough carboys (and picking up a few pails last year), the Raspberry Mocha is one that I am just getting around to making. I did finish the Coffee Port (with the tweaks of adding some instant coffee, and beans into the bottle). For fun, I added 3 tsp of Hershey's...

    Adding Tannin?

    > Don't they pretty much do the same thing in primary? In the Primary, they act as "sacrificial" tannin.

    Storing Chemicals

I put them in a ziploc bag. The ones with a slider. I think they are one of the freezer version. No need to move the label since you can easily read it through the ziploc bag. FYI: I found 1/2 pound jars of go-ferm for $10 plus shipping.

    Question on viscosity

I have never made it, but I think it has to do with the quality of the concentrate, taste of the concord grape, and you also do NOT want any sorbate in it. Welches is a high quality grape juice. Others may be a little "thinner", or less "grape" tasting, have artificial flavors (vs real grapes)...

    Question on viscosity

Everclear (90% alcohol) is just as thin as water. So, higher alcohol does not mean "thicker" mouth feel. Sugar (unfermented) can make it thicker, but it also makes it sweeter. I'm thinking you want a "big red". They definitely have more body (and higher alcohol). Ports are also are thicker...

    Looking for equipment advice

Where do you get those? Seems like it solves the problem of the bung falling off. Is this it? https://www.centralindustrialsales.com/product/cd-bung/ http://thevintnervault.com/product/924/Carboy-Dual-Ferm-Bung.html Seems like this is similar. Just add your own airlock...

Other Which Viognier kit to make

The RJS Viognier kit I made had EC-1118. I sprinkled my yeast. It started fine (1.11 to 1.10 after a day), and then took off like gangbusters. Went from 1.060 to 1.010 in one day. No added nutrients. Started a port at the same time with 2 yeast packets for the 3 gallons, and that one is...

First timer brewing kit, help needed

Start with the basics. Some kits can save you money, but only if they have stuff you will use. I am not a fan of corkers, other than a floor corker. http://www.winemakingtalk.com/forum/showthread.php?t=56542 If it is still available ... http://www.winemakingtalk.com/forum/showthread.php?t=55469

    Looking for equipment advice

If you plan on making 6 gallon kits, then you will need: 1) Hyrdometer 2) Instant Read Thermometer (get temp of must right before pitching yeast) 3) 7.5 gallon pail or larger for fermentor 4) two 6 gallon GLASS carboy 5) Starsan 7) racking cane and tubing 8) airlock w/ bung If you are making...

BOND requirement removed for small wineries

So, what are the "industrial" uses for wine?

New Bottling Accessory for the Alllinonewinepump

I have my own vacuum pump I use with Steve's tubing. My setup has a vacuum level control valve. I maximize vacuum when transferring between carboys (around 22mmhg) , and dial down the vacuum when I am bottling to slow the flow (about 10-15 mmhg).

    Seal Wax - Heat Gun?

Did the Smokey Cork taste improve the wine? How about a Solder Iron? - just kidding.

    Seal Wax - Heat Gun?

I'm thinking about getting bottle sealing wax to: 1) Countersink the cork 2) Place beads on top of the cork 3) Use a heat gun to melt the wax. Anyone tried this before? Any ideas on how to place the wax on the top of the cork without getting it onto the outside of the neck?

    Never wash your yeast again?

Must be all the dead yeast adding that special flavor to the batch.

Considering beer brewing. Few questions for you

Some of the 5 gallon kits can be easily split (have 2 jugs of extract, etc.). You may need to buy an extra bag and yeast for the 2nd batch. I brewed a few batch, but I don't drink beer fast enough.

    Need for advice

If you did not have the fruit, I would say pitch the yeast, and worry about it when you get back. Putting it in the fridge until you get back is your next best option.

    Screw cap machine

I use them when traveling. I rebottle into one, and put in a #8 cork. Then I toss the bottle so I don't have to bring it back.

    In need of cork education

1.) Are tapered corks usable for bottling wine? So much cheaper, look easier to apply... I wouldn't use them. You want the best seal you can get. 2.) Is the #7 cork only for 1-2 months storage? Stick with thicker corkers for longer storage? Or was one lonesome reviewer talking out of their...

    Other Kit Ratings

I suggest using the Kit Winemaking forum with a standard title such as: "Review: [RJS En Primeur Winery Series - Winemaker's Trio]". People can add their review of the kit. Try to keep questions in the thread to a minimum. This should make the threads easy to find.
