    Thoughts on California wine

It’s not the climate that is causing the higher abv at all it’s the style of winemaking in Paso Robles the style is to pick grapes rather late and at high brix for riper more concentrated fruit flavors as sometimes Paso fruit can be bland, they also tend to saignee off 50-60% of the juice from...

    Thoughts on California wine

That’s just you most wines can be lower alcohol around me or even higher I tend to make Calaveras used to have a lot of wineries then Prohibition killed them all off and they are just starting to come back strongly my 3x great grandfather owned a winery in the area the family operate it from...

    Winemaking 2023 is gearing up.

Dang that cab is rough looking, yields are not down where I am they are average this year but the overall grape quality is looking like it will be excellent. Grapes are perfect this year, our cab has super tiny berries and good fruit set and we haven’t had any mildew issues despite the weather...

    pH differences between batches

This happens all the time, you can even have different ph levels if the grapes are picked from several different blocks in the same vineyard.

    Electric destemmer stops mid crush

Crusher destemmer motors have a way of screwing you over and dying randomly. Have seen it happen like 8 times, hell in 2021 the motor died on the crusher destemmer at work during harvest and we had to have a guy come out and fix it.

    Grape ripening time running out?

That’s rough it’s warm today 85 finally it’s been 60’s or 70’s and hasn’t gotten warmer all year so finally seeing some warmth is going to be good for our grapes we have a lot of fruit under contract so I am anxious to get it into the winery because if it takes too much longer we might not get...

Making the softest Petite Sirah possible

It’s tough to achieve that with Petite Sirah, but I do like a good petite sirah.

    Grape ripening time running out?

We haven’t tested our grapes in about 2 weeks but last test for Merlot came out at 17 brix im thinking it’s probably like 19-20 just struggling to get to 24 would have liked it to be ripe by first of the month but not going to happen.

    Grape ripening time running out?

Dang that’s quite the spread, it’s a regular year in regards to yields here nobody is up on yields but we are also not massively down like we were in 2022. I’m hopeful that the grapes will continue to ripen and eventually hit where we want it’s just a very long agonizing wait to see what happens.

Making the softest Petite Sirah possible

Damn that’s too bad but hey wines meant to be enjoyed who cares what the “experts” think as long as people enjoy it then you succeeded

New Winery & Tasting Room checklist, thoughts, insights etc

My friend does that, everytime I go to his winery he pours everything new he’s trying usually some strange blend that he cooked up. He went to high school with my sister though so that might play into the somewhat better treatment

Impact of light showers during harvest?

It dilutes the flavors and aromas and grapes can drop fast in brix

New Winery & Tasting Room checklist, thoughts, insights etc

I’m a winemaker and I would go hang out with customers in the tasting room when I didn’t have stuff going on in the winery and talk to them about the wines we sold a lot more wine because of it I had a wealthy older lady buy $5,000 of wine in one go because we had talked about wine for about a...

    2023 Syrah: Supersize me!

It’s usually a case where I am that you might end up with good brix but the ph is like 4.0-4.5. At harvest acid just goes every year and usually requires some correction

Impact of light showers during harvest?

Light rain is fine heavy rain could ruin the grapes
