    12.5 is low for any California wine that isn’t sparkling or white. Most reds sit around13.5-14.5 with the higher abv reds 15-16.5. Mostly Zinfandel and Syrah

    Color pro is a fantastic enzyme, I also really like Laffort HE Grand Cru, I tend to use nearly exclusively Laffort products they have a lot of good stuff and it’s priced good so it works out.

    It should be a fixed number really you shouldn’t deviate from 3.7-3.8 on any red. That’s how I feel. You want a TA of like 0.550-0.660 you don’t want under 5g I would say or it will be flabby.

    I add tartaric prior to fermentation only it tastes better and integrates better and it’s pretty much necessary every year minus cool years like 2023. I shoot for a finished wine ph of 3.8 at the most.
