    I took a look at one of the vineyards I am getting grapes from this year today and the brix was 15 on vines in shadier spots and as high as 25 on some in really harsh areas average overall was 20 brix so I’m going to wait 2 weeks should be 24 brix by end of the month for that vineyard.

    It’s much the same in California agonizingly slow ripening we might not get our grapes till the end of October early November. We have a contract for grapes that’s starting to be a bit scary.

    They really don’t do the same thing different products for different uses closest product that’s cheaper is made by laffort, it’s called He Grand Cru it’s a enzyme like color pro

    Keep it as cool as possible and I will add personally my favorite and in my opinion the best Zinfandel yeast is Rp-15

    The harvest date for cab was end of September in 2021 we had picked everything else by then so the fact that everything is this late this year is a bit crazy 2022 was awful nobody really got any decent fruit yields were down and a lot of wineries skipped 2022 as a whole
