    That would work. Edges are turned down for good rain shedding and also wouldn't be sharp edges presented to the vines as strongly as a simple sheet of flashing bent over the top. I'll definitely keep that in mind! I probably need to browse Lowes or Homedepot and see what they have...the time...

    Yep. Looks kinda like u-post material. ACE hardware and other hardware/farm supply stores should carry u-posts. Most of what I've seen are enamel green ones, rather than galvanized ones. The painted ones should last a long time...galvanized a lot longer, though. You might look for companies...

    1/4" (.64 cm) is what I've heard from different places. But even more than that, in only 3 days and as fresh as the lees are, doesn't seem like they'd do any damage.

    Go-Ferm is for re-hydration of the yeast before it is pitched, if I'm not mistaken. :) I don't think it will hurt anything to add the Fermaid-K...1/2 sugar break might give the yeast a last "hoorah" on the downhill side. ;)

    With an OG of 1.080 you're kicking the door on 12% ABV. Lots of folks think that's "just right". :) There are ways of sweeting/flavoring wine after the fermentation. I'll let somebody that knows about that part of it to comment as I don't know much about it. I do know that the longer it ages...
