    +1 for the Weber.... Tossed the ~20 year old one when we moved, and the new one now has ~5 years on it. Replaced the gratings on the original one at ~15 years.

    The one thing that will really ruin your day is buying a 5 year old bottle of wine that has been stored upright, only to find the cork has dried out and crumbles upon opening. The wine won't be so good.

    I did my Fumé Blanc, pretty well following the instructions. I suck at record-keeping, so not sure if the kit included oak or not. I'd attribute George's amber color to the wine being exposed to oak for that period of time. Mine's also a golden yellow.

    The important SG reading is the one to let you know the wine is done fermenting (~0.995 or below as noted in the instructions). Without the initial reading, you will not be able to calculate the alcohol percentage.

    The ol' heat gun works fine for me - haven't heat-ruined any wine yet although I do think about that occasionally. As an added bonus, it removes those stubborn labels (almost) effortlessly.

    Kind of curious as to which Merlot kit you're doing...? Most all kits I have done have you wait ~4-6 weeks after adding the chemicals for the wine to clear on its own. As @Johnd said, your filter's probably clogged.
