    Oh, I hadn't heard that about aromatics venting out. So I can see where a carboy would provide much less surface area for the aromatics to escape than would a plastic bucket. Good to know, thx! Any need to spray that paper towel with Kmeta at all?

    But still, the end of the cork is soft, and it shouldn't be that way. Any thoughts on the oxygen contact time if I re-cork?

    Always use a helical (upper left.) "However" perhaps the problem is that I am not going all the way through the cork. Using a 2-step, so I know that initially it only goes in about half way. Hmmmm, good point!

    Thanks. I don't soak my corks, just a light spray before I insert each one. They go in easier, and gives some sort of sense that the neck is even more protected. (May NOT be a valid theory, though!)

    So you did not use berries? Only the Juice cocktail? Also, was that SG 1.012 your final AFTER you back sweetened? I imagine that I will slowly add sugar, taste, and repeat until it's right where I'd like it. Is that what you did?

    I've been wondering how a cranberry wine would taste. Can anyone give me an idea? I have not attempted one of these 1-gallon batches yet, and would like to give it a go. I do like cranberry, but it may taste different when it's converted to a wine, lol! Thx!
