    I did use @hounddawg's recipe as a guide, then Made a couple minor tweaks. Although, I think he uses a lot more Everclear than I did too. But the strawberry FWK mixed in really balances it all out

    Loosely cover it with a towel until it hits a SG 1.02 or less, then put it under airlock until day 15, then rack, stabilize and clear.

    Perhaps adding some grapefruit peel to primary, that's what I believe @joeswine does if I'm not mistaken. Perhaps a colder ferment too?

    @Matteo_Lahm Color is awesome! Wife says it is a "Winner" and thinks with a couple months age it will be her new favorite. edit....she just took another swig and said "yeah, this wine could be dangerous" 😂😂😂😂

    Yes, I did two Rieslings kits. One I added the conditioner at clearing and the other I am waiting to add at bottling. The one with conditioner added is not clearing very well, and I'll likely hit it again with K/C. But the one without is clearing nicely. I just don't see any reason to add it...

    I have found it best to NOT add the wine conditioner at the clearing stage as the instructions state, but to add it at bottling time. It seems to slow the clearing process IME

    It's called an insurance and liability policy.. without it people could claim defaulty product when it was simply user error. An if someone were to mishandle it and get sick, it's an insurance policy.
