    Kiwi wine

What was probably not mentioned yet, kiwi must be really ripe to the point of overripened. If they are not, put them in paper bags and wait until they are very, very soft.

WineXpert Island Mist Apple kit .... adding cinnamon?

I've made Apple Cinnamon wine twice but from variety of apples not kit. In February '22 I added 1 1/2" of cinnamon stick to 3 gallon carboy. It was left in the carboy for 6 weeks. I left the other half of the batch without adding cinnamon and I decided to mix them together. 1 1/2" was still a...

Finer Wine Kit Finer Wine Kits

I think I should stop panicking. I said I just started but I actually I added yeast Saturday evening and ph was 4.0. I checked right now and it's 3.7 so I'm good.

Finer Wine Kit Finer Wine Kits

Just started preordered Bordeaux FWK with 2 extra skin bags. SG was 1.094 but pH a little high - 4.0. I recalibrate the meter just to make sure and still the same reading.

    Raising ABV after fermentation

If you use 95% grain alcohol (Everclear for example) you will need 4.62 liter to raise 50 gallons from 11% to 13%. If you use 75.5% Everclear , you will need 6.06 liter to raise ABV from 11% to 13%.

    WineXpert WineXpert Chilean Merlot recommendation

Thanks everyone. I intend to bulk age for at least 6 months if not longer. During the first racking I will check how this amount of oak influenced the overall taste of the wine and I will decide how to proceed. The fermentation started already but it's not vigorous probably due to a little lower...

    WineXpert WineXpert Chilean Merlot recommendation

Fermentation is starting now so I will wait 24 hours add chips and stir. The instruction is quite generic and I think intended for a few different kits. This part is not totally clear.

    WineXpert WineXpert Chilean Merlot recommendation

I started the Chilean CS yesterday but I'm a little bit confused. I got 2 packs of Oak. One is Oak granular toasted (20g) and i pack of Oak chips medium blend (45g). The instruction says - "If your kit contains Oak Chips or Granular Oak, stir in now. If your kit contains oak cubes, they will be...

    WineXpert WineXpert Chilean Merlot recommendation

I plan to ferment one more wine before the end of the year and I was thinking about WineXpert Chilean Merlot. I didn't see the option to get a skin pack when buying this kit. Do you think guys it is a good idea to get extra skin pack from Label Peelers? I don't mind extra aging time if using it...

    Lees after 10 month aging

I've checked my strawberry wine bottles and the corks are still in place. I don't know if it carbonated or not as I plan further aging for next 12-14 months.

    Lees after 10 month aging

While bottling I left about 1 liter from the bottom for immediate consumption so the rest should be ok but decanting is a good idea. I do it usually with commercial wine too. BTW this is the first wine that I backsweetened without adding sorbate. Wine was aging for 9 month when I backsweetened...

    Lees after 10 month aging

I just wanted to share my experience with my 2nd strawberry wine I started at the beginning of December '22. I bottled the wine 2 days ago and to my surprise it still had a very small amount of lees at the bottom of the carboy even though the bottom looked perfectly clean. The wine was in the...

Finer Wine Kit Finer Wine Kits

I bottled my first FWK Merlot Novello last month and although it's not the wine I will really enjoy, it's what I expected. Novello is an Italian version of Beaujolais Nouveau and by definition is a light body, "new" wine. I don't think I will make another Novello in the next few months but...

    Apple juice as wine base?

I have no luck with Coloma Frozen. I diluted the pear concentrate pretty close to their recommendations and I added sugar to boost SG to 1.092. After 6 days the fermentation stuck at 1.012 and it tastes totally dry. So I ended up with 10.5% ABV.

    Finer Wine Kit Oak

A month ago I added pocket D, superkleer and oak cubes and I plan to rack it today, sanitize the cubes, add them back to the wine and age for the next 5 months. Should I add kmeta too? It's Cabernet Forte.

    Apple juice as wine base?

I've just checked my notes from 02.22 when I made an Apple Wine with cinnamon. I used Galla, Rome and Macintosh. One of my wife's favorite wines. Lot's of flavor. Sweetened with frozen concentrate apple juice and some sugar. This year I made apple wine with peels from 1 clementine. It's still...
