    Rhubarb Dessert Wine (Port-style)

" ,,, This would be like fermenting a high alcohol skeeter pee. ,,, how has that been done?" I'll search through the skeeter pee thread to see what information I can glean. Thank you both!

    Rhubarb Dessert Wine (Port-style)

Thanks to help from this forum, I was able to make a very nice rhubarb wine--I made it full strength meaning no water added. Lots of rhubarb flavor, back sweetended slightly and an ABV around 13%. It got me wondering if a Rhubarb Dessert wine might be nice to try. My Dessert wines from kits...

Eight years later I’ve made a good Marquette wine

Impressive. My 2020 PP is finally tasting ok at this stage. Age has helped a lot.

Eight years later I’ve made a good Marquette wine

Great post! When did you start this batch? I have PP (2020), Marquette and Foch (both 2021) in carboys that I picked at Mitchell Vineyard. That was a lot of fun. The wines have improved a lot but still a work in progress. :)

Other Tweaking Cellar Master (Low End Kits)

Here are my notes on how to make an f-pac. It's @joeswine recipe. F-Pac Blackberries or other fruit Instructions: 16 ozs. Fresh blackberries Add 2 Cups of base wine like you’re making; simmer on low Let cook down then throw into primary Picture of simmered blackberries—they turn...

WineXpert First Kit: WineXpert California Merlot Reserve (with additions?)

I finally learned this lesson. Now I always rack to another container before bottling plus I still use the fining agents according to directions, as I can't detect any taste difference. Exception is wine from grapes. I haven't used fining agents on those.

RJ Spagnols RJS En Primeur Winery Series - Italian Super Tuscan

With both the WE and RJS middle to higher end kits, I can't tell any difference. Haven't tried the lower end kits in these brand, however.

Other Tweaking Cellar Master (Low End Kits)

OK. Here are some options. I've tried them and they are good enough that I wanted to repeat. 16 oz. Blackberry f-pac and 1 Cup French Oak chips in Primary; this will result in fruit forward with oak in the background. If you split the oak 1/2 in primary and 1/2 in secondary, then you'll end up...

Other Tweaking Cellar Master (Low End Kits)

Do these kits come just with juice and the usual chemical packets, or do they also contain oak or tannins packets?

    WineXpert Super Tuscan taste bitter

None of their reds that I've done have tasted good to me until the 1.5 year mark. That's when they turned the corner for me. The Cab Sauvignon is taking even longer, so patience definitely pays off. I had grape skins in all of them. However, their Blackberry was excellent early. I'll probably...

    WineXpert Super Tuscan taste bitter

Even with racking like you did, I still end up with less than good tasting wine in the bottom. Your bottles are probably fine.

    WineXpert Apres Chocolate Raspberry

I followed the directions except I also added a fresh raspberry f-pac. Turned out very nice. My kit had me put in all at once.
