    Sounds like the sludge is just getting resuspended from the fermentation co2. I would let it ride for a day or two after ferm is complete. No matter how it tastes...you win since @Johnd threw in the towel!

    BM4x4 is good but I really like rockpile RP-15. It is one of my favorites and provides good structure to the wine.

    Do winemakers wash their grapes?

    I have seen some interesting MOG from the mechanical pickers ranging from grasshoppers, snakes and lots of mice. Hopefully they all get picked out!! Hence most places will hand pick. The hand picking tends to be much more gentle on the berries too.

    You are off the a great start! IMO, I have started tasting notes beginning middle and end. I was trying to understand what I am tasting in the beginning and how it relates to the end flavors. Obviously there is a lot in between that can affect those flavors but you gotta start somewhere...

    I have this corker and it is well built. If you have the same size bottles it is a gem! However, if you don't have a standard bottle size then there are a lot of adjustments during the filling corking process.

    @Rocky I will freeze my grape skins at the end of the fall season and use them back with Chileans juice with excellent results. I have never boiled them though. I think you would lose the tannins and flavor (as someone already mentioned). I also had a friend used froze grape skins for baking...

    Cleaning Carboys

    Interesting. Bleach is pretty agressive on stainless steel. It causes it to rust by removing it's protective oxidation. I might use it on glass for a difficult clean but never SS.
