    Adding potassium bicarbonate along with a little cream of tartar will cause the tartaric acid to fall out when placed in a 35F-40F environment for a week or so. It's best to rack off the acid crystals as some will go back into solution when it warms up.

    Just checked the label and sure enough no 2,4 D. You were right, glyphosate is the active ingregient...MY MISTAKE.

    I use a generic round up (contains 2 4 D) throughout the growing season and as long as the spray does not come in contact with the leaves you're safe.

    Oh yeah, I've made plenty. Fig by itself, fig/muscadine but to tell the truth, none of that really rocked my boat. I'd suggest making the fig wine alone using Keller's recipe and then try blending it with different wines until you hit on what you like.

    The recipe I use calls for 8#'s of blueberries and 1 gal. of blackberry juice from the steam juicer, 2 1/2 gals. water sweetened to a S.G. of ~1.083. Makes about a 4gal. batch.

    The sulfites is what's got you. You might try agitating it aggressively like shake the hell out of it. Work a lot of air into it and you may be able to reduce the sulfite level.

    The S.G. tells you that fermentation is complete so hitting it now with K-meta would be what I'd do in this case. Rack and reduce the head space.
