    It was an intense dry the back of your throat kind..I added a bit of dark black coffee to give it a fuller flavor- more tannins- but the kind I like. - It mellowed nicely after a second ferment with wild grape dregs. A small amount of stems might be a great addition for tannin.?!

    That sounds wonderful!. Do you grow the figs and use them fresh?. I’ve never seen that many fresh figs. I have used dried figs in a Beet wine that came out heavy like a sweet vermouth. Not the most drinkable- but works for a martini.;)

    Addendum: Sage can have a toxicity in certain plant types or higher levels. I would not use massive amounts or drink large amounts - just FYI.. :} in case ya’ll were considering Sage wine!!!

    Has anyone made sumac wine?

    I don’t have any Sumac patches- but found some along a bike trail and from a few friends. I also made a small batch of combined Sumac and Wild Grapes that were growing near by. Honeysuckle sounds really interesting. Keep us posted on that!
