A thought starting to come to light

I have been thinking about starting a small vineyard, but several things have stopped that from happening. Well now it is starting to look like a real possibility. I am looking at 1 acre of old farm land in eastern NC. What I don't know is what kind of grapes I want. Here are the things I'm...

    WineCalc

The wine calc does not go below 1.000 You will have to compensate when making your adjustments, ie your actual sg reading is .996 and you want to back sweeten to say 1.010 you should enter in the calc the following starting sg 1.000 target sg 1.014 This is still a .014 jump which is the...

    Strawberry wine- smell is odd

I think cooking it probably helps keep the color, but the very first batch I did was with 24 lbs and I added water back then. That made a 3 gallon batch after I strained the pulp. I did not cook that batch and cut every berry up. It kept the red color as well. After that I swore to never spend...

    Strawberry wine- smell is odd

That is last years batch, it was 197 lbs of berries and made 12-13 gallons. I did not add any extra water and I didn't ferment on the fruit. I cooked/boiled down the berries and removed the pulp. I do this because the berries I get are not always in the best shape. I freeze them in 5 lbs bags...

How to: Remove old wine labels

Instead of WD-40 try using cooking oil and a paper towel. Same principal but easier to clean up.

    My Try at Strawberry

In my opinion if I gave you a bottle of strawberry made from each of those two yeast the only way you could tell which is which is by pure luck. I can not tell the difference in them at all. Hey RR if you haven't seen my post for this years strawberry follow along with it as well...

    Strawberry time once again

I thought I was going to do pretty good this year with strawberries, After those first two trips I had 26 - 5lb bags (130 lbs) and only needed 70 more lbs to get to my usual 200 or there abouts. Well made the last trip for me this morning and this is what I got. There are 36 flats in the bed of...

    Fig wine

I am no fig expert however here is my opinion, I made a 3 gallon batch using 20 lbs. At first taste it was very sulfur(y) but I have had wines taste that way and turn out great (this was one of them) After clearing back sweetening and aging for about 6 months the next taste was great. It tasted...

    Muscadine still too acidic

I wasn't going to add anything to the 5 gallons until the bubbling stopped. It was degassed a year ago, when it was already almost a year old. For the last 6-8 months nothing has been happening to it and in the last couple of weeks it started to bubble again. I will be taking a SG reading later...

    Muscadine still too acidic

I have 8 gallons of muscadine aging, 1 - 5 gallon carboy and 1 - 3 gallon carboy. The 5 gallon seems to be going through MLF, in the last 2 weeks it has started bubbling again. The 3 gallon did not do this, I racked the 3 gallon this morning and it was still very acidic. Would adding calcium...

    Strawberry time once again

Leave it to my 16 year old son to make something out of the two big bubbles in that pic. I wont say any more bout that I'm sure everyone has an imagination. If you look in my photo albums on here you will see more of the explosive strawberry that I ferment. I don't know why but strawberry is...

    Hello from NC

Better late than never, (as usual for me) but welcome to the forums. Im over on the north eastern part of NC. Once you get going with the kits and move over to the fruit based stuff you will be happy with the fact you can get fresh raspberries to work with. I cant find any at a reasonable price...
