    Fixing a high tannin problem

What I will do is try it on the extra that has been in the fridge now for about 2+ months. It is only about a quart or so, but even after being in the cold for that long it still has a really bitter after taste. If that works I will bottle 1 gallon and apply the egg white method to the other 2...

    Fixing a high tannin problem

Chokecherry is the wine in question. Like winemaker I made a chokecherry wine this year and I added some tannins to it. Well come to find out they dont need any thats for sure. So The question is Is there anyway other than time to reduce the astringent taste that it has? It taste very good...

    Sparkolloid VS Super-Kleer

I usually use sparkolloid, however I recently I started using superkleer and find that it seems to be easier and faster (when used correctly). Sparkolloid works good but it seems to be more work to use it. Getting it to disolve is a pain.

    What R you doing today?

Im not sure about Sirs but the low here has been 34 and 38 the past two nights and should be around that for the next few nights. Being that he is closer to the mountains I would expect it to be colder there. So there is plenty of frost in the mornings..... that said I know nothing about frost...

    Degassing ??

I just started using super clear, so others would be better at answering that question. As far as adding any clearing agent (which I normally use sparkolloid) I didn't. I actually backsweetened at bottling time, so it went straight into bottles after sweetening.

    Degassing ??

When I used honey to sweeten the mead I made I put some of the mead in the jar with the honey and shook it. Then I added that to the mead and stired it to help it disolve. I will add that it made the mead very cloudy afterwards. It has been bottled in beer bottles now for a few weeks (around a...

    Watermelon Wine...

Is it hazy or cloudy? Sounds like (assuming here) that it might be hazy and you might could get it to clear up with some pectic enzyme. If its cloudy, you could try the egg white trick. I know about this method but have never tried it.

    Newbie from Eastern NC

There maybe some we just dont put bees on them, and I never paid that much attention to the signs while we were moving the bees over there.

    White "Chocolate" wine

There are two answers to that question, 1. Yes we do, check my signature for a link to the post "Question about our honey" 2. Right now we dont have any to sell, we sold out early this year and we rarely purchase honey from other local keepers. SO when we are out were out. Sorry.

We put bees on several blueberry farms over near New Bern, however those are all commercially picked blueberries. I have never known them to allow the public in for a pick your own type of thing. Although I did manage some blackberries from one of them this past year.

Welcome to the forum, and your are right about the knowledge here, and the best thing is they are all friendly enough to help and even answer repeat questions that alot of other places get annoyed with. That doesn't mean anyone should do it, but these guys and gals are alright in my book...

    Super Clear OOPS

I put them in reversed before I relized what I had done. No real worries now though, it has already gotten real clear, still needs some time but it is working just fine. I also used it on my elderberry which just didn't want to clear up. I haven't been back home to look at it yet but I will...

    Super Clear OOPS

I am not exactly a newbie at wine making but this is certainly a newbie mistake. I have never used superclear before until today, I usually use sparkoloid. SO What happens if you get part 1 and part 2 mixed up? What I did was disolved part one in 1 oz of water and put part 2 straight into...
