    Juice bucket mixed results

Maybe my next experiment in the Fall will be juice bucket plus a lug of grapes. It’s strange but I tasted a 750 ml bottle of Cab Suav from 2020 yesterday and it was watery. The 5 gallons same juice from 2020 that I bottled two cases of today was definitely better. Only difference was oak spiral...

    Juice bucket mixed results

I know I saw something like this before. I’ve used juice buckets from two different suppliers locally over the past few years. Mixed results- one was consistently just blah and the other was pretty good. Tried different grapejuice merlot, cab sauv, sangiovese. Calif and Chile varieties. Can...

    Riesling Taste prior to bottling

Would the fizz be due to gas still very much present? Have you tried to degas it by stirring or better yet a vacuum degassing? Joe

    Pear Wine

I love the Bartlett pear wine we made two years ago. I found it needed some backsweetening to bring out the flavor and a little acid blend provided a bit of crispness. We are planning to start another 5 gallons using 44# of chopped and cleaned pears we have in the freezer. I may try some of it...

    I need your advice.

I too am sorry for your loss. I hope you are able to at least try to make it work in memory of your father. What a great tribute this would be for him! And it is a real legacy that he will have passed on to you and your family if you can make this work. I think getting other winemakers in the...

Winery DIY (Do It Yourself) Projects

My wife got a new kitchen upstairs and my winemaking went into the garage downstairs. I haven't completed the project yet but had a double utility sink already and now I attached a piece of the counter top from upstairs plus a large cabinet along that same wall for my winemaking chores. I will...

    Bottling bucket vs (siphon) wand

I must be in the minority but I like the wand. I have never tried from a bucket/spigot though. I find that I can control the amount flowing into the bottle pretty well with the wand. I take my time doing it and it is not a problem for me.

    To back sweeten apple wine?

Pear wine is good, one of my favorite fruit wines so far. I plan to make another 5 or 6 gallons later this year. My apple wine turned out pretty good with added sugar water to back sweeten and a little acid for a crisper taste. This was made from 3 gallons of fresh apple juice bought at a...

    Carboy bung slipping out.

I’ve used the drying both carboy mouth and the bung really well and taping the bung down with electrical tape. The tape is my last resort if I don’t like how it fits. I may try the soaking in hot water next time though.

    To back sweeten apple wine?

Does adding frozen concentrate turn the wine cloudy? It’s crystal clear right now

    To back sweeten apple wine?

I like the idea of using frozen apple concentrate which will bring the apple fruit flavor more forward.

    To back sweeten apple wine?

Do you backsweeten or not? I have 3 gallons aged and am not sure. Thanks.

    Dandelion Wine

I only made a gallon once- that picking the flowers nearly killed my back. If I do it again I will pay some kids to do the hard work! It tasted very good though.

    Chilean Juice Bucket

abruzzired: I like your "box" idea with the light for a heat source. I too do all fermentations in my cool temp garage these days and used a light on the bucket for heat source, but did not think of creating a box. Next time I will definitely do this. Thanks.
