    This pear wine really grows on you. Nice balance and delicate flavor. Great chilled in refrigerator or on some ice. Will make more next Fall. Joe

    2nd racking / degassing and bung advice

    I used a hand corker for several years. Even made a wooden jig to hold bottle on a table while corking. But when I bought a used floor corker WOW. What a difference! So much easier, faster and no spills.

    New sinks!

    I set up a length of 1.5 pvc pipe directly to a floor drain. The sink drain goes into a short piece of pipe then to a 90 deg elbow and from the elbow a quick disconnect adaptor to the long pvc pipe. Works fine. When finished I quick disconnect and store the long pipe till next time.

    Bottled pear wine

    Great idea. We didn’t care for the lingering flowery scent/taste of the pear extract. Puree seems like a good addition. My next batch will be mainly fruit juice since I have 42# of prepped pears in freezer from last fall. No water. Here is one bottle.

    This was started last summer and bulk aged. Today bottled 26 bottles nice and clear. Added some simple syrup that seemed to bring out the flavor. Still a very subtle pear taste and about 12% abv.     Used it today. Only a six g bucket for waste water but it was a big help racking, cleaning and bottled two + cases.

    Kumquat wine help please

    The flavor kind of reminds me of a dandelion wine I made several years ago. That one took a full two years aging to mellow out. I’m hoping for the same result with kumquat wine. Kind of a green grass taste that’s hard to describe. joe
