    I've never considered starting at the beginning of fermentation. I've always heard to start towards the end or shortly after completion of fermentation before sulfite additions.

    Picking up my Chilean juice today at Consumer's Produce in the Strip District today. 24 gallons of Carmenere and 24 gallons of Syrah. Will be using RC-212 yeast and oaking with Medium American Oak. MLF will be started toward the end of fermentation.

    Weather didn't cooperate for jumping on Saturday. I scheduled a half day tomorrow from work and will be there at 10:00 am to complete my jump.

    Got to meet Rocky and his Son in Law this afternoon. Very nice folks, we chatted about wine making and enjoyed some 2015 Elderberry wine. If I decide to let anything else go, I'll be sure to let you know. I look forward to enjoying the wine you shared with our family.

    Just got my bill. $140 for 1000 1+1 corks, $100 die charge as a one time fee and $40.40 in shipping to Pittsburgh from Napa CA. Shipping was 59 last time I ordered.

    Corks were $140 per 1000 for the 1+1 and another $100 for the branding. The branding fee is a one time fee though.

    Carboys 5 and 6 gallon

    I decided I was going to part with some of my carboys. Up for sale are 5-5 gallon and 5-6 gallon glass carboys. Asking $20 each for the 5's and $25 each for the 6's. Shipping is not an option. Located in Crafton, PA which is about 4 miles outside of Pittsburgh near Greentree.
