    Need to sweeten blueberry wine

Just for clarity the correct term is not "potassium sulfide" rather it is "potassium metabisulfite". To back sweeten a wine there are two methods that can employed to ward off a secondary fermentation in the bottle months later. Method 1 involves sterile filtering using a membrane cartridge...

If you ever wondered why certain areas in the East grow grapes

If you ever wondered why certain areas in the east can grow vinifera grapes here is your answer and we can thank the Great Lakes, Appalachian Mountains, and the Atlantic Ocean. Across the east if your soil is favorable for grapes and you do not live in the grey or Aqua colored areas you can...

Vineyard in Mexico, what type of grape would be suitable?

I would review what they are growing in southeastern Arizona (Wilcox) and southern New Mexico (Las Cruces). One of the problems I see is that the rainy season arrives usually in June and then it rains a lot in July which is typical of the Southwest Monsoon season. It is a problem because you...

Designing a simple system to create a submerged cap in a macrobin

Been thinking of designing a simple perforated plate of stainless or plastic that could be held down in place submerging the cap just below the surface. The screen would still need to be removed twice a day to allow for a punchdown as the cap will eventually be too compacted against the screen...

Ideas to drive weekday traffic at the tasting room.

So today was our first Friday offering free tasting and while it wasn't spectacular it was better than a usual Friday. The good news is that most people who visited still purchased so it seems to have worked...

    Drastic drop in SG

If you cool it down just make sure you are still progressing...you'd hate to get a stuck ferment unless you don't mind some residual sugar.

Bud and graft union protection using filled bucket

You can dig a trench next to the vine and tip the whole vine over sideways and bury it in the trench. The key here is to not damage the trunk during burial or when you did it up. Bending too sharply may crack the trunk or dinging it with the shovel can do damage as well. If you damage the...

Ideas to drive weekday traffic at the tasting room.

Good idea but we already do that marketing for evening crafts and etc. Daytime stay at home moms will have the kids in tow and we are not equipped to be a daycare nor do we think its a good idea to have moms tasting alcohol and driving their kids around. So we will probably steer clear of this...

    Pennsylvania winery question

The funny thing I can see this requirement being once again dragged before the courts based on the interstate commerce clause. Preventing a business to engage in interstate commerce to produce a product using raw materials from another state pretty much goes against every other sector of...

    Pennsylvania winery question

Sorry Z that is no longer applicable law in PA. In Nov 2016 they passed a new law which amended the liquor law and specifically wrote that requirement back into effect. Wineries that import grapes from more than 350 mi away are breaking the law and eventually the LCB will catch up with them.

    Pennsylvania winery question

Actually in PA Prior to 1995 it all had to be produced in PA. They changed the law in 1995 allowing for up to 350 mi from the winery to source fruit. In 2005 the law was deem unconstitutional and unenforceable, from 2005 to 2016 you could source grapes from anywhere. The law was updated once...

    Pennsylvania winery question

Good God we have one convoluted system in this state! So according to Act 166 of 2016 which amended Act 39 of 2016 which corrects the unconstitutionality of Title 47 P.S. Liquor § 5-505.2 § 5-505.2. which had been nullified by the Supreme Court decision of Granholm v Heald and the federal court...

    Floaties

Its mycoderma, nothing to be too concerned about. Wipe the inside neck of the carboy with an SO2 solution then top the carboy to just a hair under the bung. Another way to get rid of it is to overflow the carboy with a little topping wine. Once ML is complete get it sulfured and topped with...
