    Jet bottle washer fitting on the cellar sink tap with hot water, that is it. Then placed upside down in wine boxes. I have never had a problem.

    Funny I decided to skip MLF all together this year. I used Avante that eats up 30% of the malic and also have several barrels that have been aging my wines for years with VP41. I was told that these cultures stay existent in the barrel and do the job over time. Trying to use the least additives...

    Yes I agree 100% about the petit sirah... You cannot put a large percentage as it just dominates. Small amounts 5-7% are ideal.

    Thanks guys. I am doing a pretty small batch so I will not be able to use 2 different yeasts separately. Right now I am leaning towards the D47. Is it a strong fermenter? I am also considering just a wild ferment but not too sure about that...

    My 2016 was 40% Cab 30% Merlot 30% Sangiovese. It was probably one of the best wines I have made to date. 2019 I did 40% Cab 40% Sangiovese 20% Merlot. Still young and need for improvement.

    When to retire a Barrel

    Thanks for all your input guys. My barrel still has no problem oaking, it’s a smaller 55l. Maybe it just needs a good cleaning... I normally clean it with hot water and sulfite. Anything else I could do to clean it up? my last batch of wine was in there for 4.5 months, maybe it’s just overoaked.

    On average, how many years do you guys use a barrel? I have a 55l French oak barrel that I bought back in 2016 and it's starting to lose its shine. It still oaks decently but not the same as it used to. Wondering how much longer I should use it...
